How to choose fresh ingredients
How to choose taro that is not fibrous
- Quality taro is those tubers that are medium to large in size, with the inner flesh being milky white, mixed with a little light purple.
- Usually, non-fibrous taro will have many eyes on its body, with a rough skin, and still covered with many roots and dirt on the skin.
- You should avoid buying taro with too few eyes and smooth skin as this is a sign that the taro has become fibrous, and its sweetness is significantly reduced.
How to choose quality dried shrimp
- Quality dried shrimp will have a natural, bright pink-red color, especially with no unusual dark spots on the surface.
- When touched, the dried shrimp should feel distinctly firm, not too soft or crumbling, and there should be no unusual fishy smell.
- Avoid purchasing dried shrimp that is too dark red, as this may indicate that the shrimp has been soaked in colorant, which is not good for health.
- Additionally, to ensure the safety of your family’s health and enhance the flavor of your dishes, you can make dried shrimp at home using the simple recipe below from TasteVN!
How to prepare Taro Porridge

Prepare the ingredients
First, peel the taro you bought, using a knife to cut it into small, bite-sized pieces. At the same time, soak the taro in a bowl of cold water for about 15 minutes, then drain the water and let it dry.
For 30g of dried shrimp, soak it in a bowl with 100ml of water for 20 – 25 minutes. Once the dried shrimp is soft, drain the water, and then chop it finely with a knife.
Finally, remove the roots of the scallions and green onions, wash them directly under running water until clean, drain, then cut the scallions into pieces and chop the green onions finely.
