Fresh cassava 500 gr Coconut flesh 400 gr Red-fleshed dragon fruit juice 200 ml Pandan leaf extract 200 ml Coconut milk 200 ml Diluted coconut milk 400 ml Tapioca flour 4 tablespoons Sugar 300 gr Salt A little

How to choose good cassava

  • You should choose fresh, plump, straight tubers, with a thin skin, as they will have less fiber, be softer, and sweeter.
  • Use your fingernail to lightly scrape the thin outer skin of the cassava; if the inner skin is light pink, choose it; if it is white, it should be discarded, because the pink skin will have fewer toxins than the white skin.
  • Cassava should not be kept for too long, as it will become hard, dry, and lose its taste. Cassava is similar to bamboo shoots; although delicious, you need to carefully prepare it before cooking to remove the toxins inside the cassava tuber.

How to make Cassava Ball Dessert

  • Preparing cassava

    Fresh cassava should be peeled and soaked in salted water for about 5 minutes, then rinsed with clean water. Use a knife to remove the inner flesh of the cassava.

    Use a grater to grate the cassava into a large basin.

    Take a cloth and place a little grated cassava in it, then squeeze hard to extract the juice into a separate basin, and the squeezed cassava should be placed in another basin.

    Let the cassava juice settle in the basin without pouring it out; after 1 – 2 hours, the cassava juice will settle at the bottom and concentrate into cassava flour.

  • Mix cassava

    After about 2 hours, pour out all the water in the cassava bowl, and the remaining thick flour should be added to the grated cassava bowl.

    Add 1 tablespoon of sugar to the bowl and use your hands to mix everything evenly together. Divide the cassava into 2 equal parts.

    Gradually add 200ml of pandan leaf juice to one bowl of cassava, mixing well to prevent the cassava from becoming too mushy. Then add 1 tablespoon of tapioca flour and 100ml of coconut milk, mixing until everything is well combined.

    Do the same with the remaining bowl of cassava using dragon fruit juice.

  • Shape and steam cassava

    Gradually roll the cassava into small round balls, large or small depending on your preference.
    Place a cloth on the steamer, and put the rolled cassava on the cloth.

    Put the steaming pot on the stove, add water to the pot, and turn on the high heat. Steam for about 10 – 15 minutes; when the cassava becomes translucent, it is cooked.

    Tip: To prevent the two colors of cassava from mixing, separate the two colors before steaming.

  • Cooking the sweet soup

    Place a pot on the stove, turn on medium heat, add 500ml of water and 250g of sugar to the pot, boil until the sugar completely dissolves in the water.

    Add all the steamed sweet potato balls into the sugar water, cook for about 5 minutes and then turn off the heat.

    Tip: If you prefer it sweeter or less sweet, you can increase or decrease the amount of sugar as desired.

  • Cooking coconut milk

    Mix 2 tablespoons of tapioca flour with 100ml of water in a bowl, then stir until dissolved.

    Add 400ml of diluted coconut milk into a pot, bring to a boil, then add the diluted tapioca flour. Season with 2 tablespoons of sugar and 1/3 teaspoon of salt.

    Taste again to achieve a creamy, sweet, and slightly salty flavor, then when the mixture is boiling vigorously, turn off the heat.
