How to choose good goat meat

  • Good goat meat will have a pinkish-red color, firm flesh, and will not be watery. Frozen goat meat will have a pale color, is often watery, and has a fishy smell.
  • Good goat meat is fresh goat meat, tender young goat, with a slaughter-to-processing time of about 12 hours.
  • You should not buy goat meat that has a strong odor or has dark meat color and large fibers. This goat is old, and the meat will be tough and not tasty.
  • It is advisable to buy meat from reputable goat meat suppliers, with clear origins, complete inspection stamps, veterinary certificates, food safety certificates, and establishments or stores that meet the conditions for selling fresh meat.

    To eliminate the smell of goat meat, soak and rub the meat in water with 1 tablespoon of white wine, 1 tablespoon of coarse salt, and 4 slices of ginger for about 5 minutes, then rinse thoroughly with water and briefly blanch in boiling water with 1 tablespoon of vinegar for about 2 minutes before removing.

  • Prepare other ingredients

    Peel the sweet potatoes and taro, cut them into bite-sized pieces, and soak them in diluted salt water for about 5 minutes to prevent them from browning, then rinse with clean water and drain.

    Wash the eggplant, cut off the stem, and cut the eggplant into wedges about the length of a finger.

    Peel the garlic, mince half of it, and crush the rest. Peel the shallots, wash them, mince half, and slice the rest.

  • Marinate goat meat, pan-fry sweet potatoes

    Add the blanched goat meat along with minced ginger, minced onion, minced garlic, 1/2 teaspoon chili powder, 1 tablespoon sugar, 1/2 teaspoon ground pepper, 1 tablespoon fish sauce, and 1/2 tablespoon curry powder into a bowl. Mix well and marinate for about 15 minutes for the meat to absorb the spices.

    Then, add 2 tablespoons of cooking oil along with sweet potatoes and taro into the pan, fry for about 2 minutes over medium heat until the surface of the potatoes is evenly golden, then turn off the heat and transfer to a bowl.

    Crush the lemongrass, slice the shallots, and crush the garlic, then add 1 tablespoon of cooking oil into the pot, stir-fry until the oil is hot and the garlic is fragrant, then add the marinated goat meat.

    Stir well over medium heat, then add 500ml of coconut water, and stew on low heat for about 20 minutes.

  • Cook Curry

    After stewing the goat meat for 20 minutes, add sweet potatoes, taro, eggplants, and 1/2 tablespoon of curry powder into the pot.

    Cover the pot and continue to stew for about 8 minutes, then add in the coconut milk, mix, taste and adjust the seasoning as needed, cook for another 3 minutes, then turn off the heat.
