Mussels 500 gr Tiger prawns 500 gr Squid 500 gr Green chilies 3 pieces Coconut milk 360 ml Unsweetened condensed milk 480 ml Curry powder 20 gr Butter 50 gr Red bell pepper 1 piece Green bell pepper 1 piece Ground dried chili 2 teaspoons Cooking oil 2 tablespoons Fish sauce 2 tablespoons Shallots 1 bulb Ginger 1 piece Garlic 5 cloves Seasoning powder 2 teaspoons Pepper 2 teaspoons

How to choose fresh and delicious shrimp

  • When buying shrimp, you should choose shrimp that have hard, transparent shells, tightly attached to the flesh, with the tails tucked together, and especially still have the scent of the sea.
  • Fresh and delicious shrimp will have a straight or slightly curved shape, with the head and legs tightly attached to the body.
  • You should not buy shrimp if they show the following signs: have a fishy smell, dark patches on the shell or uneven colors, are slimy, with the tail fanned out, and the head and legs not tightly attached to the body. These are usually shrimp that have been injected with chemicals or water to make them plump or have gone bad.

How to make seafood curry

  • Prepare the seafood

    Wash the mussels with cold water. Scrub the shells to clean them. Remember to wash each one separately, trying to use your hands or a knife to remove any beards on the shell. Then, separate the shells and soak the mussels in water for 10 minutes.

    For squid, gently pull the head and tentacles away from the body of the fresh squid and set them aside. Remove the squid’s innards from the body, cut it into bite-sized pieces. Then wash thoroughly and soak in water for 10 minutes.

    After buying shrimp, cut off the head, peel the shell, remove the shrimp’s intestine, and wash thoroughly. Then soak in water for 10 minutes.

  • Prepare other ingredients

    Finely chop 5 cloves of garlic and slice 1 piece of ginger and 1 red onion.

    Cut the bell pepper into bite-sized pieces.

  • Cooking curry

    Place a pan on the stove, add 2 tablespoons of cooking oil. Then, add chopped onion, ginger, and garlic to sauté until fragrant.

    Next, add 50g of butter to the pan and continue to sauté. When the butter has completely melted, add 2 teaspoons of ground dried chili to the pan. After about 30 seconds, add 200ml of coconut milk and 480ml of unsweetened condensed milk, stirring well.

    When the pan simmers, add 1 teaspoon of ground pepper and 10g of curry powder. Continue stirring the pan until the curry mixture boils, then add in the bell peppers to sauté together.

    When the curry turns yellow, add 500g of mussels to the pan. After about 10 minutes, add 500g of shrimp to the curry and cover the pan for 2 minutes.

    After 2 minutes, uncover the pan, add 2 green chilies, season with 2 tablespoons of fish sauce and the remaining 10g of curry powder into the pan. Then add 500g of squid to the curry, pour in the remaining coconut milk, and cover the pan again for 2 minutes. After 2 minutes, uncover it, and your seafood curry is ready!

    The finished seafood curry has a beautiful yellow color, with a fragrant aroma typical of curry, combined with delicious seafood and a rich broth.

  • Prepare the ingredients

    After purchasing the mussels, rinse them several times with water to remove dirt.

    For the octopus, to reduce the fishy smell, you need to wash it with salt and vinegar. Then steam it until cooked.

    Tip: To prevent the dish from being fishy, you should steam the octopus before cooking so that it won’t release water.

  • Cook curry

    First, place a pot on the gas stove, once the pot is hot, add 1 tablespoon of vegetable butter to melt.

    Next, add all the minced garlic to sauté until fragrant. Once the garlic is aromatic and turns golden, gradually add 2 tablespoons of curry powder, 1 tablespoon of chili powder into the pot, and stir well. Then, continue to add 1 bowl of water into the pot.

    Next, season the pot with 1 teaspoon of seasoning powder, 1/2 tablespoon of salt, 2 tablespoons of sugar, and 1/2 teaspoon of monosodium glutamate.

    After the spices have dissolved, add all the prepared seafood and stir well, then bring to a boil for 5 minutes.

  • Prepare coconut milk

    You add 1 tablespoon of cornstarch to a bowl of coconut milk, stir well until the cornstarch is completely dissolved.

    At this point, the seafood is cooked, you pour the bowl of coconut milk and cornstarch mixture into the seafood pot, then mix well and cook for another 5 minutes.

    Tip: To prevent the seafood from shrinking, becoming tough, and losing its natural sweetness, you should not cook for too long.

    You add 1 tablespoon of coarse salt, 2 tablespoons of sugar, a few green chilies into a mortar and pound until fine. Then, you put the mixture into a bowl and squeeze in the juice of 1/2 a lemon, then mix well to dissolve the seasonings.

How to Choose Fresh and Delicious Squid

  • To buy fresh and good squid, you need to observe the color of the squid. You should buy those with a shiny color, the squid’s body should be opaque white like milk, and the eyes should be clear, not bulging out.
  • When buying, you can press the squid’s body with your hand. If when you pull your hand away, the squid quickly returns to its original state without leaving a dent, it indicates high elasticity, and you should buy it.
  • For fresh squid, the head and tentacles should stick tightly together.
  • You should not choose squid with detached tentacles, a soft and mushy body, eyes that have turned cloudy, and sometimes there is fluid leaking out.
