How to Prepare Almond Soup

Prepare the almonds
First, with 100gr of almonds you bought, place them in a bowl with 300ml of water, just enough to cover the surface, and soak for about 6 – 8 hours.
Once the almonds are soft, drain the water, peel the skins by hand, and wash them again to clean, then let them dry. Finally, slice 1/4 of the almonds and keep the rest whole.

Sauté the spices
Heat a pan on the stove with 1 teaspoon of cooking oil and 22gr of unsalted butter over medium heat. Once the butter melts, add 1 tablespoon of minced garlic, 1 tablespoon of minced ginger, and 60gr of diced shallots and sauté until fragrant.
Then, add 22gr of flour and stir well using a spatula, then continue to add 1 tablespoon of cornstarch, stirring again for about 2 – 3 minutes. When the mixture becomes thick, turn off the heat.

Blend and cook the soup mixture
Gradually add all the roasted spices, whole almonds, 60ml of fresh milk, and 60ml of water into the blender, and blend smoothly for about 2 – 3 minutes. Once the mixture is smooth, turn off the machine.
At the same time, pour the blended mixture into a new pot along with the remaining 240ml of fresh milk, place it on the stove, and cook over medium heat for 3 minutes.
Then, add 1 teaspoon of black pepper and 1/2 teaspoon of salt, stir well with a ladle, and continue to add the remaining sliced almonds and 60ml of cream, cooking for 3 – 5 minutes.
When the soup starts to bubble gently, add 350ml of water, stir well with a ladle, cover, and cook for another 2 – 3 minutes.
When the soup is gently simmering again, season to taste and turn off the heat, then serve in bowls to enjoy!
Tip:- To avoid losing the deliciousness of the soup, do not let it boil too vigorously, as this can easily cause the milk mixture to separate.
- Additionally, to prevent any adverse effects from eating almonds, make sure to cook them thoroughly!
