For dried shrimp, soak in hot water for 5 – 8 minutes until the shrimp softens, then remove half to pound and leave the other half whole.
Shallots should be peeled, washed, and sliced.
Chives and Vietnamese coriander should have their roots removed, washed, and chopped finely.

Add 1 teaspoon of cooking oil to the pot, heat the oil, then add minced shallots and sauté until fragrant.
