- Shrimp shape: Fresh shrimp will have a straight body, while shrimp that have been left out for too long will be curved. The body of the shrimp should be firm, not soft and mushy.
- Shrimp head, tail, and legs: Fresh shrimp will have their head, legs, and tail firmly attached to the body, with the tail closed together. If the tail is spread out, it may indicate that the shrimp has been injected with impurities. Do not choose shrimp with heads, legs, and tails that have turned black, as these are shrimp that have been stored for too long and are not fresh.

How to choose and store fresh peas
- To choose fresh peas, you need to select peas with shiny pods, and when you snap the stem, they should always be crunchy. Avoid choosing peas with wrinkled pods as those may not be tasty or may have shriveled seeds.
- After purchasing, you should store whole peas in a sealed bag in the refrigerator’s vegetable compartment if not using immediately. When needed, just take them out, shell them, and prepare them. With this storage method, you can keep peas for about 5 – 6 days.

Prepare the shrimp and pork
Remove the shrimp heads, peel the shells, then use a small knife to make a shallow cut along the back to remove the shrimp’s intestine. Gently squeeze the body of the shrimp with your fingers so that the intestine protrudes a little, then pull it out with your fingers.
Tip for quickly removing the black vein on the back of the shrimp
- Count backward from the shrimp tail to the second groove connecting the two segments of the shrimp shell, insert a toothpick through this position and gently pull the black vein to remove it from the shrimp.
- You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to dig out the head of the shrimp body to find the black vein. Gently pull this black thread out, and the shrimp will be clean.
Pork should be washed with diluted salt water, then rinsed with clean water and boiled in a pot for about 2 – 3 minutes, then drain the water, wash the meat clean, and let it dry.

Shrimp and meat are chopped finely, mixed together, and then marinated with about 2 teaspoons of water, 1/2 teaspoon of salt, 1/3 teaspoon of pepper, 1/2 teaspoon of seasoning powder, then mixed well.
