  • Shrimp shell: Choose shrimp with a transparent shell that has the typical smell of seafood, not stinky or slimy, and without dark patches or inconsistent colors. The shell should be dry and not slimy.
  • Shrimp shape: Fresh shrimp will have a straight body, while shrimp that have been left out for too long will be curved. The body of the shrimp should be firm, not soft and mushy.
  • Shrimp head, tail, and legs: Fresh shrimp will have their head, legs, and tail firmly attached to the body, with the tail closed together. If the tail is spread out, it may indicate that the shrimp has been injected with impurities. Do not choose shrimp with heads, legs, and tails that have turned black, as these are shrimp that have been stored for too long and are not fresh.

    • Count backward from the shrimp tail to the second groove connecting the two segments of the shrimp shell, insert a toothpick through this position and gently pull the black vein to remove it from the shrimp.
    • You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to dig out the head of the shrimp body to find the black vein. Gently pull this black thread out, and the shrimp will be clean.

    Pork should be washed with diluted salt water, then rinsed with clean water and boiled in a pot for about 2 – 3 minutes, then drain the water, wash the meat clean, and let it dry.
