Preparing the Squid
Buy the squid, remove the tentacles from the body, and then pull out the ink sac. Next, remove the eyes and the hard, round part in the tentacles (called the squid’s beak) and rinse the squid with clean water or salt water 2 – 3 times to finish.
How to properly clean squid
- Step 1: Pulling the head and tentacles: Use one hand to hold the squid’s body and the other hand to hold the squid’s head, then gently pull upwards and carefully peel off the ink sac.
- Step 2: Use a knife to cut off the squid’s eyes and the hard, round part in the middle of the squid’s head (called the squid’s beak), then squeeze this part out with your hand.
- Step 3: Peel the squid skin: use a knife to make a light cut on the head of the squid’s body to create a ridge between the skin and the squid meat. Hold the squid meat firmly with one hand and grip the squid skin with the other hand and pull it off.
- Step 4: Clean the insides and the head of the squid and rinse thoroughly with water.

Soaking the Squid
Place the squid in a basin, add 1 ice cube, 1 tablespoon of salt, and 4 tablespoons of white wine.
Use scissors to cut the squid’s belly in half, soak for about 5 – 6 minutes, then rinse with clean water and let it drain.
Tip:
- Soaking the squid in wine and salt helps to keep the squid fresh while removing the fishy smell.
- You can add a few slices of ginger to soak together for a fragrant squid.

Drying squid
You arrange the squid on the baking tray, use paper towels to dry the body of the squid, and use toothpicks to skewer horizontally through the squid.
To keep the oven temperature stable, preheat the oven at 60 degrees Celsius for 10 minutes, then put the squid tray in to dry at 50 degrees Celsius for 2 hours.
When the time is up, turn the squid over and continue drying for another 30 minutes.
Tip: Skewering the squid horizontally will help prevent the squid from curling up when drying.
