  • Choose pig intestines that look new, shiny, and springy when pressed, without any slime or unpleasant odor.
  • Good pig intestines have a round, taut shape, pinkish-white color, and the liquid inside is milky white.
  • Do not buy pig intestines that are slimy, soft, or dark in color.
  • Avoid buying pig intestines that are large in diameter, flat, with yellowish liquid inside.

How to Prepare Crispy Dồi Trường

  • Prepare the Dồi Trường

    After purchasing the dồi trường, remove all the fat and wash it thoroughly with diluted salt water, then let it drain.

    Next, blanch the dồi in boiling water for about 3 – 5 minutes. Then, remove it and rinse it again with water.

    Finally, slice the dồi trường into small bite-sized pieces.

    • First, briefly boil the dồi trường with a little salt, white wine, and a few slices of ginger for about 3 – 5 minutes
    • Then, remove it and soak it in cold water mixed with a little alum (or vinegar) for a few minutes, then rinse it again with water.

  • Marinate the Dồi Trường

    Peel the garlic and mince it, then fry it until golden and fragrant.

    Next, add the sliced dồi trường into a bowl along with the fried garlic, 1 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1 teaspoon of fish sauce.

    Mix the ingredients well, then cover tightly and let it marinate for about 10 minutes for the dồi to absorb the flavors.
