  • Choose fish with protruding, clear, sparkling eyes, bright natural scales that shimmer. Pressing the fish should give a feeling of firmness and elasticity.
  • Do not choose mackerel that has a pale color, lacks shine. If the fish bends down when held in the middle, and the eyes are cloudy, it is also advisable not to buy it because it has been stored for too long.

  • Prepare the ingredients

    Clean the mackerel by removing the gills and intestines, or ask the seller to help clean the fish, then rinse it once with water, after that use salt to rub the fish for about 3 minutes, rinse it thoroughly, and place it in a basket to drain.

    • Method 1: Use salt or ginger to rub all over the fish to reduce the fishy smell and slime, then rinse with clean water.
    • Method 2: Rinse the fish with lemon juice and vinegar, then rinse again with clean water.
    • Method 3: Soak the mackerel in diluted white alcohol for about 5 minutes, then rinse clean.
