    The mackerel you buy should be rubbed with a little salt, then rinsed clean with water and cut in half into bite-sized pieces.

    • Method 1: After cleaning the fish, cut it into bite-sized pieces and soak in rice water for about 15 – 20 minutes, then take it out and rinse thoroughly with clean water.
    • Method 2: When washing the fish, you can mix a few tablespoons of white wine or vinegar in the water, then soak the fish for about 5 minutes and rinse again with water.
    • Method 3: Soak in water along with the fish and a few smashed ginger slices for about 10 minutes to eliminate the fishy smell.

    Remove the stem from the tomatoes, rinse briefly with water, and then dice them. Squeeze out the excess water from the pickled mustard greens and let them drain.

    Marinate the fish for about 1 hour for the fish to absorb the spices evenly.

    Place the fish pot on the stove, pour the fish out and boil with high heat, when the water in the fish boils, add 250ml of boiling water to the pot, reduce to low simmer and cook the fish for about 1 hour.

    When the fish sauce with pickles reduces, season it to taste then turn off the heat and serve the fish on a plate.
