  • Fresh fish will have bright and clear eyes, a fresh smell of the sea, skin without strange colors, and shiny scales.
  • Choose fish with firm flesh; when pressed, it should feel springy and the belly should not be swollen.
  • Avoid fish with sunken eyes, slightly gray gills, open mouths, and unpleasant odors as these are fish that have spoiled and are no longer fresh.

  • Should choose large, round bamboo shoot buds with black outer leaves and many stiff hairs outside.
  • For pre-peeled bamboo shoots, you should choose those that have a rough shape, evenly spaced joints, thin skin, crisp texture, and are juicy.
  • Avoid choosing bamboo shoots that are too white or brownish-yellow, have an unpleasant smell, or are soft and mushy as these are low-quality bamboo shoots.

  • Prepare ingredients

    Wash the silver pomfret fish and rub it with a mixture of salt and lemon for about 5 – 10 minutes, then rinse and cut into bite-sized pieces.

    Peel the bamboo shoots, wash them, then boil until cooked and cut into small pieces. For the shallots, peel and finely chop them.

    • Method 1: After buying fresh bamboo shoots, peel off the outer leaves, then boil them in hot water several times, rinsing with clean water after each boiling. Do this until you taste and find the bamboo shoots have softened and lost their bitterness.
    • Method 2: After boiling, soak the bamboo shoots in rice washing water for about 2 days. During the soaking process, frequently change the water.
    • Method 3: Boil fresh bamboo shoots with the skin in rice washing water, adding deseeded fresh chili while boiling. Boil for 2 – 3 times before using the bamboo shoots in dishes.

    Wash the chili peppers and chop them finely. Clean the roots of the green onions, wash them thoroughly, then use a knife to cut the green onion tops separately; cut the green onion stems into pieces about 2 finger lengths long.

    Season with 2 tablespoons of fish sauce, 1 teaspoon of monosodium glutamate, 1 teaspoon of salt, and 2 teaspoons of red color oil, then marinate the fish for about 45 minutes to let it absorb the seasoning. You can adjust the seasoning according to your preference.
