How to make Butterfly Pea Jelly Pearls with Agar Powder

  • Soak Butterfly Pea Flowers

    First, take a bowl and add 5g of dried butterfly pea flowers and 100ml of hot water, using a spoon to press down gently so that the butterfly pea flowers are submerged in the water, then let the flowers release their essence for about 15 minutes.

    When you see the essence has turned a dark blue color, remove the butterfly pea flowers.

  • Mix Agar Powder

    At the same time, take a bowl and add 150g of sugar, 3g of Agar jelly powder, and 10g of soft jelly powder, using a spoon to mix well so that the sugar and jelly powder blend together.

  • Cooking the jelly mixture

    Next, take a pot, add 800ml of water along with the bowl of sugar and jelly powder that you just mixed, and use a whisk to stir well until the mixture is dissolved.

    Then, put the pot on the stove over medium heat, while continuously stirring with the whisk and cook for about 10 minutes.

    When you see the mixture boil and change to a more opaque white color, cook for an additional 2 minutes, then add all of the butterfly pea flower extract, continue to stir well, and cook for another 3 – 5 minutes.

    When the jelly mixture comes to a boil again, you can turn off the heat!

    Tip: Avoid letting the jelly mixture clump together; when adding the sugar and jelly powder to the water, you should do it slowly while continuously stirring.

  • Shaping the tapioca pearls

    After cooking the jelly mixture, take a bowl and add 100ml of water along with some ice cubes. When the ice water is cold, add 100ml of cooking oil.

    At the same time, pour the jelly mixture into a squeeze bottle and gradually squeeze the jelly mixture into the bowl of cold ice water. Continue this process until all the jelly mixture is used up.

    Next, rinse the tapioca pearls directly under running water to clean them, then transfer them to a bowl. Finally, add the remaining 50gr of sugar along with the juice of 1/2 a lime, and mix well to complete!

    Tip:
    • To save time, you can use cold water to make the ice water chill faster.
    • If you want the tapioca pearls to have a nice round shape, squeeze them in the area with cooking oil!

  • Cooking Butterfly Pea Flowers

    First, you place a pot on the stove with 150ml of water over high heat. When the water boils, add 10gr of butterfly pea flowers, use a spoon to stir well, and cook for about 3 – 4 minutes.

    When you see the water has turned a deep blue, turn off the heat, remove the butterfly pea flowers, and keep only the concentrated water.
