    Put 3g of dried butterfly pea flowers into a bowl and soak with 100ml of boiling water for about 5 – 10 minutes to extract the color from the flowers, then strain out the flower residue to obtain the butterfly pea extract.

    You just need to wash the lemons and squeeze to get the juice through a strainer, then use a knife to cut the remaining lemon into thin slices for decoration.

  • Steep the Tea

    Place a pot on the stove, add 500ml of filtered water to the pot and boil over medium heat for about 3 minutes until the water boils, then turn off the heat.

    Add the 500ml of boiled water into the bowl along with 1 tea bag and steep for about 5 – 10 minutes until the tea is infused and the water turns a deep yellow color, then remove the tea bag.

    Place a pot on the gas stove and add 400ml of filtered water and 300g of sugar, cook over medium heat for about 4 minutes until the sugar syrup thickens, then turn off the heat.

    Pour 100ml of brewed tea into a cup, then add 50ml of cooked syrup and 2 spoons of kumquat juice.

    Stir gently, then add ice cubes, pour 20ml of butterfly pea flower extract on top, and decorate with a few thin slices of kumquat to complete.

    Tip: To better suit your family’s taste, you can adjust the sweet and sour levels accordingly!
