Prepare and marinate the beef
The beef tenderloin you buy should be washed clean with diluted salt water and then rinsed with clean water.
Next, use a clean damp cloth or paper towel to wipe around the piece of meat to remove excess water, then cut the meat against the grain into slices about 1/2 – 1 finger thick, depending on your preference.
Then, add a little salt and a little pepper and use your hands to rub the spices evenly over all sides of the meat, then marinate for 10 – 15 minutes for the meat to absorb the seasonings. To make the beef softer, you can gently pound both sides of the beef!

Prepare the other ingredients
First, cut the root and separate the leaves of the caron lettuce.
Remove the stem from the tomatoes, then wash them thoroughly and soak in salt water for about 10 minutes, then rinse with clean water and let them drain.
Boil the American corn until cooked.
Wash the straw mushrooms briefly, soak for 10 minutes in diluted salt water, then cut off the mushroom stems, rinse again with clean water 2 – 3 times, and then slice them thinly.

Make teriyaki mushroom sauce
Place a pan on the stove and add 10ml of olive oil (about nearly 1 tablespoon) to the pan, wait for the oil to heat up, then add the oyster mushrooms and stir-fry on high heat.
When you see the mushrooms start to release water, add 2 tablespoons of teriyaki sauce, 1/2 tablespoon of oyster sauce, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 teaspoon of chili powder. At this point, stir well to combine the mushrooms and the spices.
Reduce the heat to low and stir-fry the mushrooms for about 2 more minutes, then add 50ml of unsweetened fresh milk and stir until the sauce thickens.

Making cheese sauce
Place another pan on the stove and add 100g of unsalted butter to melt, then add 100ml of unsweetened fresh milk into the pan. Simmer the mixture over low heat until the milk starts to bubble, then add 4 slices of cheese and stir well until the cheese completely melts and blends into the milk.
Next, mix 2 tablespoons of water with 2 teaspoons of cornstarch, then gradually add the cornstarch to the cheese milk mixture and stir well until the cheese sauce thickens, achieving a moderate stickiness.
Tip:- To create a natural saltiness for the sauce, which will taste better, you should use cheddar cheese.
- To avoid the sauce becoming solid and forming a film on the surface, which will lose its deliciousness when eaten, you should simmer the sauce over the lowest heat possible.

Pan-seared beef
First, heat the pan with 150ml of olive oil, then add 50gr of unsalted butter to melt.
Next, add garlic and onion to the pan and sauté until fragrant, then lower the heat and add each piece of beef, searing each side for about 1 minute. After that, add the remaining 50gr of unsalted butter and baste the surface of each piece of beef to enhance its flavor and richness.
When you see the meat turning slightly charred on the outside, but when you press the chopsticks inside, it should still be tender and release juices, it’s done.
Tip:- For each batch, sear 1 – 2 pieces of beef, then add a little more olive oil and continue to sear the remaining pieces of beef.
- Since the heat is high, the garlic can easily burn and create an unpleasant smell when it sticks to the meat, so you should push the garlic to the side of the pan to avoid direct contact with the heat that causes it to burn.
