  • Delicious enoki mushrooms are fresh, with firm caps, white and shiny color, stems that are not slimy or slightly brown, and not crushed; the base of the mushrooms should not be separated or crumbled.

  • Prepare the ingredients

    The beef you buy should be cleaned with water to eliminate any unpleasant odor, then soak in white wine for about 15 minutes and slice into thin pieces.

    The enoki mushrooms you buy should have their ends cut off, separated, then soaked in diluted salt water for about 5 minutes, taken out, rinsed with cold water, and drained.

    • Method 1: Rub lemon on the beef for about 7 minutes, then rinse with water before cooking.
    • Method 2: Soak the beef in vinegar for about 5 minutes, then rinse with clean water.
    • Method 3: Rub salt on the beef, let it sit for 5 minutes, then rinse with clean water.
    • Method 4: Soak in diluted salt water for about 15 minutes, then rinse several times with clean water.
