How to choose fresh and delicious ingredients
How to choose fresh and quality beef tail
- Prefer to buy beef tails that have bright red meat, bright yellow fat, and white tendons.
- To buy fresh beef tails, you should choose whole beef tails; when pressed, the meat should be firm, have good elasticity, and not have a foul smell.
- Avoid buying beef tails with dark red meat, where pressing shows soft fat and an unpleasant smell.
How to choose delicious and reliable lotus seeds
- For fresh lotus seeds: Choose mature lotus seeds that are creamy white or deep yellow, with a round and plump outer layer; they will taste very fragrant without being rubbery.
- For dried lotus seeds: It is best to choose lotus seeds that are opaque white, small and uniform, and intact without being crushed or broken.
- To buy good and quality lotus seeds, you should purchase from reputable stores, supermarkets, and large markets. When buying, check the origin, expiration date, and whether the packaging is intact.
How to choose good and chemical-free radishes
- Choose radishes that are straight, with smooth skin free of scratches, and feel firm when held.
- Fresh radishes will still have root hairs around the bulb, with the leaf stems intact, firmly attached to the bulb, and the leaves should be bright green.
- Avoid choosing radishes that are too large, with wilted leaves, and a thick shoulder, as these usually have a lot of fibers and a bland taste, making them unappetizing.
How to choose fresh and delicious carrots
- Choose carrots that are of moderate size, not too big or too small, straight in shape, with a smooth outer skin, bright color, and feel firm when held.
- To buy the freshest carrots, you should go to the market early in the morning because that is when the carrots have just been harvested and are still very fresh.
- Avoid choosing large carrots with thick cores, cracked skins, and many bruises, as they may be old carrots that, when eaten, will taste bland and not delicious.
How to prepare Beef Tail Stew with Lotus Seeds
-
Prepare the ingredients
After purchasing the beef tail, cut it into bite-sized pieces and rub salt all over the beef tail. Then, rinse it thoroughly under running water and let it drain.
Wash the ginger and cut it into thin slices. Soak the lotus seeds in water for about 3 hours until they soften, then drain them.
Peel the white radish and carrots, wash them clean, and let them drain. Cut the white radish into pieces about 2 finger lengths long and cut the carrots into flower shapes.
Wash the scallions, let them drain, and then chop the green parts finely. For the scallion bulbs, cut them into pieces about 2 finger lengths long.
-
Boil the oxtail
Place a pot on the stove, add enough water to cover the oxtail and bring it to a boil.
When the water boils, add sliced ginger, 1 tablespoon of vinegar, and the prepared oxtail, then boil for about 5 minutes.
After that, remove the oxtail and rinse it with clean water one more time and let it drain.
-
Marinate the oxtail
Place the oxtail into a bowl along with 2 tablespoons of fish sauce, 2 tablespoons of sugar, and 1 teaspoon of ground pepper, then mix well and marinate for about 35 – 40 minutes to absorb the flavors.
-
Stew the oxtail
Add some hot water into the pressure cooker. Then, add the marinated oxtail into the pressure cooker and stew for about 30 minutes.

Cooking Beef Tail with Ingredients
After simmering the beef tail, take it out and place it in a bowl, then strain the beef tail broth through a sieve.
Place a pot on the stove, turn the heat to high, add about 4 liters of water to the pot and bring it to a boil. Once the water is boiling, reduce the heat, add the beef tail, white radish, and the beef tail broth, and cook until the radish is tender, then add the carrots.
Continue cooking until the carrots are soft, then add the lotus seeds. Season the pot with 3 tablespoons of fish sauce, 2 teaspoons of salt, and 1 teaspoon of seasoning powder, then stir well and taste to adjust seasoning.
When the lotus seeds are soft, add the green onions, cook for another 5 minutes, and then turn off the heat.
Finally, ladle the beef tail into a bowl, add a bit of chopped green onions on top, and you can enjoy it right away.
