Preparing the Nuts
First, place the nuts in the oven, and then roast for 5 – 7 minutes at 150 degrees Celsius to make the nuts crispier and tastier. Next, crush the nuts evenly.
Then, melt 20g of unsalted butter in the microwave for about 30 seconds. For the lemon zest, grate or finely chop it.

Mixing the Egg and Flour Mixture
In a large bowl, add 1 egg, 1 teaspoon of sugar, and then beat with a mixer on high speed for about 5 minutes. After that, add the melted unsalted butter and mix the mixture well.
Next, sift into the egg mixture: 100g of whole wheat flour and 2g of baking powder, then mix thoroughly to combine the ingredients.
Finally, add the grated lemon zest and the roasted nuts, and mix once again.

Preheat the oven to 170 degrees Celsius for 10 minutes.
Shape the dough into a rectangular block, then wrap it tightly in a layer of parchment paper and bake for the first time for 20 minutes at 170 degrees Celsius.
After the first baking, let the cookies cool, then place them in the fridge for about 15 minutes. Next, cut the cookies into pieces about 1/3 of a small finger’s thickness.
