Ingredients for Coconut Black Bean Cake Serves 4
All-purpose flour 30 gr Cocoa powder 20 gr Chicken eggs 6 pieces Black beans 100 gr Coconut milk 120 ml Sugar 50 gr Salt 1/4 teaspoon Vanilla extract 1 teaspoon Baking soda 1/2 teaspoon (baking soda)
How to choose good black beans
- Good black beans usually have thin skins, shiny black color, and evenly round seeds. You should avoid beans with a white powdery layer on the outside, as these are either old black beans or contain preservatives.
- You should choose green heart black beans because they will be richer and tastier when cooked.
How to clean and prepare black beans better
- The preparation steps include washing, soaking, and roasting black beans. You should wash the black beans thoroughly at least 2 times, then soak them in water for 6 – 8 hours to allow the beans to swell and soften. Discard any beans that float on the surface of the water during soaking.
- After soaking, turn the heat on high and place the black beans in a pan to roast for about 10 minutes, until you see the skin of the black beans wrinkle slightly before cooking or steaming them.

How to make Black Bean Coconut Cake
-
Boil the beans
After washing and soaking the beans for 8 hours, remove them and let them drain.
Then, pour enough water to cover the beans and cook over high heat for about 20 minutes, until the beans are soft and easily mashed, then drain the water and let the beans cool.
Tip: Soaking the beans before cooking helps remove enzyme inhibitors, allowing the nutrients in the beans to be fully utilized. In addition, soaked beans cook faster and will be more delicious and flavorful.See details: Why soak beans and grains before cooking?
