Mixing and Kneading the Dough
Pour 150g of tapioca flour, 10g of rice flour, 5g of cocoa powder, and 30g of brown sugar into a bowl and use a whisk to mix the ingredients well.
Next, pour in 120ml of boiling water and continue to stir. After about 5 minutes, the dough will gradually become cohesive.
Then, pour the whole dough onto the table. Divide the dough into 4 parts and shape each into a long cylinder about 1 cm in diameter. After that, cut into small pieces about 1/2 finger length and shape each piece into a round ball.
Coat a thin layer of tapioca flour on the surface to prevent the pearls from sticking together. Once all the pearls are made, pour them into a strainer to discard any excess tapioca flour.

Making black sugar pearls
Place a pot on the stove, pour in 500ml of water, wait for the water to boil, add all the pearls, adjust the heat to medium, and cook for 25 minutes.
After 25 minutes, turn off the heat, take the pearls out, and soak them in cold water immediately. After 2 minutes, remove them and let them drain.
Continue by placing a pan on the stove, add 70g of brown sugar and 50ml of water, and bring this mixture to a boil. While waiting for this mixture to boil, stir well with a spoon to ensure the brown sugar completely dissolves in the water.
After 5 minutes, add the pearls and cook for another 7 minutes. Stir continuously to ensure the pearls cook evenly and do not burn.
Once the pearls are cooked and the black sugar starts to caramelize, turn off the heat and let it cool for 30 minutes.
