- To buy quality cow’s feet, you can observe the appearance of the ingredient to make a decision. Fresh cow’s feet are usually dry, not slimy.
- At the same time, the cut on fresh cow’s feet will have a natural color and the meat on the feet is usually bright, without bruises or strange colors.
- Because the front feet of cows are more active, you can ask to buy the front feet to fully enjoy the chewy and crunchy texture of the meat and tendons in this part.
- You should avoid buying cow’s feet that have unnatural colors, the meat on the feet is slimy and has strange grains.
How to prepare Boiled Beef Legs

Prepare the ingredients
After buying the beef legs, you rub salt around the beef legs to eliminate the fishy smell for about 3 – 5 minutes and then rinse thoroughly. Next, you scrape off the hair and wash the beef legs several times with water, then let them drain. After that, you use a knife to make a cut on the beef legs and carefully separate the meat from the bones of the beef legs. You wrap thread around the beef leg meat and prepare to boil it.
Ginger, after buying, you cut into pieces about 2 finger lengths long. Next, you wash it thoroughly and then crush 2 to 3 pieces of ginger one by one.
For starfruit, you wash it thoroughly and then cut the starfruit crosswise into slices about 1/4 – 1/3 of a finger length thick.
As for lime leaves, you just need to wash them thoroughly and cut the leaves into very thin strips.

Boiled Beef Feet
You place a non-stick deep pan on the stove, fill it with water up to 2/3 of the pan, turn on the heat, and gradually add the beef feet.
Next, you continue to add 2 – 3 crushed ginger pieces along with 2.5 spoons of chili sauce into the pan and boil the beef feet over high heat.
When the water in the pan starts to boil, you adjust the heat to medium-low and continue to boil the beef feet for about 5 – 10 minutes before turning off the stove.
Tip:
- When the water boils, you can add the cow’s trotters to the pan to boil together with the beef feet.
- If you want to boil the trotters as well, you should boil the dish over medium heat for 20 minutes so that both the beef feet and trotters are cooked through!
You take the beef feet and trotters out of the pan. For the beef feet, you place them into a bowl of cold water to cool them down while still maintaining their chewy and crunchy texture.

Chop the beef legs
You place the beef legs on the cutting board, using a knife to cut off the part wrapped around the beef legs.
Then, you cut the beef legs into bite-sized pieces about 0.5 – 1 knuckle thick, depending on your eating preferences.
