How to choose fresh and delicious beef
- To select good beef, choose pieces that are bright red, with fat that is bright yellow and tendons that are white.
- Choose pieces with fine, tender fibers, not too smooth.
- When pressing the meat with your hand, if the meat has good elasticity, does not stick to your hand, and has no unpleasant smell, then it is good meat.

How to Prepare Cambodian Grilled Beef Sandwich

Make the marinade
Add 2 teaspoons of white pepper, 2 small chili peppers, 5g chopped garlic, 5g chopped shallots, 20g finely chopped lemongrass, and 20g cilantro roots into a mortar. Use a pestle to pound the mixture until it’s smooth.
Next, add 30g of palm sugar, 20g of soy sauce, and 20g of oyster sauce, then mix well.

Prepare and Marinate the Beef
Wash the beef thoroughly, then slice it into thin pieces. Next, marinate the beef with the marinade mixture for 30 minutes to absorb the flavors.
How to prepare beef to reduce odor
- Roast a piece of ginger until cooked, then peel off the charred outer layer, pound the ginger, and rub it on the beef, leaving it for about 3 minutes before rinsing with clean water.
- Since beef is not strongly odorous, you can also rinse it briefly with clean water.
