- Good chicken has thin skin, feels smooth to the touch, and when pressed, the meat feels firm and elastic. For salad, you should buy local chicken, which has a chewier and sweeter meat.

- Do not buy if the chicken meat is soft and mushy, has an unusual odor, or has bruises or grayish discoloration because it may indicate that the chicken died before being slaughtered.

Prepare the chicken
Rinse the chicken you bought once with water, then use salt to rub the meat thoroughly for about 3 minutes, then rinse with clean water.
Next, put the chicken into a pot, fill with water, add 1/3 teaspoon of seasoning, 1/3 teaspoon of monosodium glutamate, and 3 peeled shallots.
Place the pot of chicken on the stove, turn on medium heat and boil for about 10 – 15 minutes from the time the water boils; at this point, the chicken is cooked, remove it to a colander to cool.
Once the chicken has cooled, shred the meat into small, bite-sized pieces.
