Marinate the chicken
Next, take a bowl and add the entire amount of chicken that has just been prepared along with the minced shallots, garlic, bird’s eye chili, 1/2 teaspoon of MSG, 1/2 teaspoon of sugar, and 1 teaspoon of sesame oil, mix well, and let the chicken absorb the flavors for 20 – 30 minutes.

Peel the ginger, rinse it briefly with water to clean it, and let it dry. Then, use a knife to cut it into diagonal pieces and crush them.
Next, take the carrot and use a peeler to peel it, rinse it clean, let it dry, and cut it into bite-sized pieces.
At the same time, take a bowl and soak the wood ear mushrooms in water for 45 – 60 minutes. When the mushrooms are soft, drain the water, remove the stems, and cut them into pieces.
Then, for the straw mushrooms, remove any black parts on the surface, soak them in diluted salt water for 10 minutes, then rinse them with clean water and let them dry.
Finally, for the green onions and coriander, remove the roots, rinse them clean, let them dry, and cut them into pieces.
