What is clay pot porridge?

  • Clay pot porridge is porridge cooked with mung beans, chicken (duck) that has been marinated with spices (usually lemongrass) thoroughly before being stir-fried to firm it up, then cooked, so the flavor of this porridge will be very rich, and the meat will be more tender and delicious compared to regular chicken (duck) porridge.
  • Clay pot porridge is usually not served with salad but is eaten with fresh vegetables or hot pot vegetables.

  • Prioritize choosing chickens that are of moderate size and weight, not too big or too small. Because a chicken that is too small may be an underdeveloped one, while if it’s too big, it may have been pumped with water.
  • Choose chickens that have naturally pinkish-red meat, with thin skin, smooth to the touch, not too bumpy, and have good elasticity.
  • Avoid choosing chickens with soft, mushy meat, that feel slimy to the touch or have many bruises and clotted blood spots.

  • Choose mushrooms that are still in bud form, not yet opened, fresh, with a slightly round or cylindrical shape and have the characteristic natural aroma of mushrooms; when touched and gently squeezed, the mushrooms feel slightly firm.
  • To make the dish more delicious and visually appealing, you should choose mushrooms that are of moderate and uniform size.
  • Choose straw mushrooms that are black or gray in color, as they will taste better than the white variety.

  • Prepare the chicken

    After buying the chicken, you need to wash it thoroughly with water. Then, check if there are any feathers left on the chicken. If there are, pluck them out and wash again with water 2 – 3 more times and let it drain.

    How to prepare chicken without a foul smell:

    • Method 1: Mix vinegar and salt in a ratio of 2:1, then rub it all over the chicken, scrub multiple times, and rinse thoroughly with clean water.
    • Method 2: Rub a few slices of lemon on the chicken meat with a little salt, then rinse thoroughly with cold water to eliminate any unpleasant odor from the chicken.
    • Method 3: Crush a piece of ginger with a little white wine and massage it onto the chicken meat and let it sit for about 30 minutes before cooking to help mask the unpleasant smell.

    You use a knife to cut off the stems of the straw mushrooms and then wash them thoroughly with water and let them drain. Then, cut the mushrooms in half.

    The green onions and coriander should be cut off at the roots, washed clean, and then allowed to drain. The watercress should have its roots cut off, and the lettuce should be picked for the tender tops, then wash all of them with water until clean.

    Soak the green beans in water for 45 – 60 minutes to soften the beans and make them easier to cook. After soaking, rinse the beans thoroughly and let them drain.

    Wash the rice well.

    Place a pot on the stove, turn the heat to medium, add about 3.5 liters of water, the washed rice, and the soaked green beans, then cook until the rice and green beans are soft.

  • Marinate the chicken

    After cleaning the chicken, cut it into small pieces and place all the pieces into a bowl.

    Then, add to the bowl containing the chicken 2 tablespoons of minced garlic, 1 tablespoon of salt, 4 tablespoons of sugar, 1 teaspoon of seasoning powder, and mix well, marinating for about 10 minutes for the chicken to absorb the flavors.

  • Stir-fry the chicken

    Place a pot on the stove, turn the heat to medium, and add 4 tablespoons of cooking oil into the pot. Wait for the oil to heat up, then add 2 tablespoons of minced garlic and sauté until fragrant.

    Next, add the marinated chicken and stir-fry briefly until the chicken is firm, then turn off the heat.

    Put the freshly stir-fried chicken into the porridge pot and cook until the porridge boils again. Next, add the straw mushrooms and cook for about 15 more minutes until the chicken meat and porridge are soft, then season to taste.
