Sticky rice 500 gr Chicken breast fillet 2 pieces Fresh shiitake mushrooms 250 gr (about 15 – 20 pieces) Carrot 1 bulb (large) Fresh lemongrass 2 stalks Pandan leaves 2 sprigs (small) Minced garlic 2 tablespoons Ginger 3 slices Shallot 1 bulb Wheat flour 300 gr Tapioca starch 1/2 cup Soy sauce 1 teaspoon Oyster sauce 2 teaspoons Cooking oil 8 tablespoons Common seasoning a little (seasoning powder/MSG/sugar/pepper)

How to choose sticky rice that is sticky and delicious

  • For making sticky rice, you should choose yellow flower sticky rice or mountain sticky rice for better stickiness and taste. It is advisable to buy from reputable establishments, supermarkets, large grocery stores, or TasteVN.
  • You should buy sticky rice that is carefully packaged by the manufacturer to avoid purchasing rice that has been mixed with impurities.
  • Good sticky rice will have large, round, glossy grains, not cracked, not dusty, and have a milky white color.
  • Quality sticky rice will have a light aroma, and there will be no lingering scent on your hands after handling it. If there is a scent left on your hands, then the rice has been treated with fragrance chemicals, and you should avoid buying these types.

How to choose fresh and safe chicken breast

  • You should choose chicken breast pieces with white skin because this indicates a larger chicken, which has firmer and tastier meat; younger chickens tend to have more tender meat.
  • If you buy skinless chicken breast, check the layer of fat on the chicken; if the fat is white, the meat will be tastier.
  • You should not choose chicken breast pieces with many white streaks; the more streaks there are, the less fat and protein there is, making it harder for the meat to absorb flavors during cooking.

How to choose delicious crunchy shiitake mushrooms

  • You should choose shiitake mushrooms that have a uniform brownish-yellow color, a distinctive aroma, a firm stem, and a thin layer of fuzz on the cap.
  • When buying fresh shiitake mushrooms, you should choose those with medium-sized caps, tightly curled, and with the gills on the cap forming a neat, beautiful, and dry chain.
  • Do not choose mushrooms with bruises, wrinkled caps, bruised, or slimy. If the mushrooms are dark brown, they should not be purchased as they may be poisonous.

How to prepare Mini Chicken Sticky Rice

  • Prepare the ingredients

    Soak the sticky rice in cold water for about 4 – 6 hours, then rinse thoroughly several times until the rice grains are plump, round, and shiny.

    Place the steamer pot on the stove, pour the soaked sticky rice into the steamer along with 2 branches of washed pandan leaves for about 40 – 45 minutes.

    Tip: Everyone should soak the rice first and then prepare the other ingredients to save time!

    After buying carrots, cut off the tops, peel them clean, wash them thoroughly, and then cut them into thin strips about the length of one finger.

    Rub 2 pieces of chicken breast fillet with 2 tablespoons of salt for about 7 – 10 minutes to reduce the odor, then rinse thoroughly.

    Next, place a pot of water on the stove, boil the chicken breast with 2 stalks of fresh lemongrass and 1 smashed purple onion along with 3 slices of ginger for about 20 – 25 minutes. Check to see if the chicken is completely cooked, then turn off the heat, remove the chicken and let it cool slightly before shredding it along the grain into bite-sized pieces.

    Wash the shiitake mushrooms, drain them, then slice them lengthwise along the mushroom stem.

  • Stir-fried chicken and mushroom filling

    Place a pan on the stove, heat 2 tablespoons of cooking oil over medium heat, then add 2 tablespoons of minced garlic and sauté until fragrant and golden for about 3 minutes.

    Next, add the shredded carrot and torn chicken breast, stir-fry quickly over medium heat, then season with a mixture of spices including 2 tablespoons of seasoning powder, 1 teaspoon of monosodium glutamate, 3 tablespoons of sugar, 1 tablespoon of soy sauce, 1 teaspoon of black pepper, and 2 teaspoons of oyster sauce.

    When the filling has absorbed the seasoning evenly, turn off the heat and transfer it to a plate to drain. The remaining liquid after stir-frying should be continued to be heated on the stove over low heat; when it just starts to boil, add 1/2 cup of tapioca flour mixed with warm water and stir continuously until the mixture thickens to use as sauce.

  • Wrap the sticky rice

    Take a large piece of plastic wrap and lay it on the palm of your hand, take a sufficient amount of hot sticky rice, press it flat in your palm, then place the chicken and mushroom filling in the center and wrap it tightly into a round shape.

    After wrapping the sticky rice and the chicken and mushroom filling, let the rice ball rest for about 15 minutes to set its shape!

  • Frying sticky rice

    After letting the sticky rice ball rest to fix its shape, remove the plastic wrap and roll the sticky rice ball in a layer of flour.

    Heat a pan on the stove, add 6 tablespoons of cooking oil over medium heat, then add the sticky rice balls and fry them until golden brown, then take them out and place them on a plate lined with absorbent paper to drain, then arrange and decorate on the plate.
