How to make Chocolate Bubble Milk Tea

Mix the bubble dough
Put a pot of water on the stove and bring it to a boil, then reduce the heat and proceed to steam 125gr of chocolate until it melts.
Put 250gr of tapioca flour into a bowl, then slowly pour in 150ml of boiling water and the melted chocolate into the flour, mixing it well by hand as you pour. Knead the dough until it is smooth, pliable, and not sticky to the touch.
Once the mixture is well combined, divide it into small portions and roll them into bubble pearls.
Tip:- You must mix the flour with boiling water for the flour to dissolve easily and be shaped better.
- When rolling the pearls, you should sprinkle a layer of tapioca flour on them so that they do not stick together.

Cook chocolate tapioca jelly
Place a pot of water on the stove and bring it to a boil, then add the previously rolled tapioca pearls and cook for about 5 minutes until the pearls float on the surface of the water, then remove and soak in cold water for about 2 – 3 minutes and let drain.
After draining, mix the tapioca pearls with 1 teaspoon of lemon juice and 2 teaspoons of sugar until the seasoning is absorbed into the pearls.
