Ingredients for Hai Phong Coconut Coffee For 4 people
Coffee water 200 ml Coconut milk 200 ml Tapioca starch 15 grams Condensed milk 100 ml Tapioca pearls 100 grams Black jelly powder 50 grams (1 package) Sugar 100 grams Salt 2 grams Grated coconut 30 grams Dried coconut 10 grams
How to make Hai Phong Coconut Coffee

Make jelly
To make the jelly, pour 1 liter of water into a pot, then gradually add the jelly powder while stirring continuously until the powder completely dissolves. Next, add 50 grams of sugar and stir until dissolved. Let it sit for 5 – 10 minutes.
Put the jelly pot on the stove and cook until done.
Stir continuously while cooking to prevent the jelly from burning!
After cooking, pour the agar into a box to cool down, then put it in the refrigerator for about 2 hours. Before eating, take it out and cut it into small pieces about 2 cm thick.

Cook tapioca pearls
Place a pot of water on the stove and bring it to a boil. Once the water is boiling, add the tapioca pearls and boil for 20 minutes until the pearls float, then turn off the heat and let the pearls sit covered for another 20 minutes.
After resting, scoop the tapioca pearls into a bowl, add 50 grams of sugar, and mix well to ensure the pearls absorb the sugar.

Coconut Coffee Preparation
Add 200ml of coffee, 200ml of coconut milk, 100ml of condensed milk, and 2 grams of salt into a pot. Stir well.
Add 200ml of water into a bowl containing tapioca starch and stir well.
Pour the coconut coffee mixture into the pot, and bring to a boil over low heat. Stir continuously to prevent the mixture from burning.
Once the coffee mixture starts to simmer, add 50 grams of sugar, and gradually pour in the previously prepared tapioca starch while stirring until the coconut coffee thickens.

Finishing Touch
Add shaved ice, grass jelly, and tapioca pearls into a glass, then pour the coconut coffee on top. Finally, sprinkle some shredded coconut and dried coconut on top to complete.

After completion, the coconut coffee has an attractive color and aroma. The bitter coffee is harmonized with the rich and refreshing coconut milk, served with chewy tapioca pearls and crunchy grass jelly, ensuring that one sip will make you addicted.
