The coconut water has a subtle sweetness, so you don’t need to add much sugar; if you prefer it sweeter, you can add more than the amount of sugar indicated in the recipe.
Cut the coconut in half, scrape the coconut meat into shreds or dice it, and set the coconut meat aside.

Making jelly and pouring into molds
Pour coconut water, 30 g of granulated sugar, and 2 teaspoons of agar powder into a pot, stir well to dissolve, and let the mixture rest for 15 minutes. Place the pot on the gas stove, while cooking, use a wooden spoon to stir constantly to ensure that the agar powder and sugar have completely dissolved.
Prepare the jelly mold, placing the finely chopped coconut flesh at the bottom of the mold. Remove the pot from the stove, pour the coconut jelly mixture into the mold. Wait until it cools down a bit, then place the jelly mold in the refrigerator for about 1 hour to let the coconut jelly set, then take the mold out, tap it lightly and squeeze the mold to release the coconut jelly or use a knife to loosen it to serve immediately.
