Tapioca flour 520 gr Young coconut 300 gr Fresh coconut water 300 ml Coconut milk 400 ml Tapioca flour water 45 ml Pandan leaves 15 gr Sugar 200 gr Salt 1/4 tablespoon Food coloring a little (red/ green/ purple/ yellow)

How to Make Coconut Milk Taro Balls Dessert

  • Cook Coconut Milk

    Place a pot on the stove, add 300ml of fresh coconut water, 400ml of coconut milk, 200gr of sugar, and 1/4 tablespoon of salt. Stir well over medium heat until the mixture is combined.

    Next, add 15gr of pandan leaves, bring the mixture to a boil for 5 minutes, then remove the pandan leaves.

    After that, add 45ml of tapioca water (45ml of water mixed with 2 tablespoons of tapioca flour) and 300gr of young coconut into the pot, stir well once more and turn off the heat.

  • Mix the Dough for Taro Balls

    First, boil 400ml of water, then prepare 4 cups of water, each cup containing 100ml of the boiled water.

    After that, drop 1 – 2 drops of food coloring in green, red, purple, and yellow into the corresponding four cups and stir well.

    Next, place 130gr of tapioca flour into each of the 4 bowls and pour the colored water you prepared into each bowl to mix the color for the taro balls.

    Use a whisk to quickly mix the flour until well combined, then use your hands to knead until it forms smooth, elastic dough balls.

    Divide the 4 portions of dough into smaller parts, then roll the dough into strips about the thickness of a finger, then cut the dough into small pieces and roll them into balls to form tapioca pearls.

    Bring a pot of water to a boil, add the tapioca pearls and cook over medium heat until they turn translucent and float to the surface, indicating they are done.

    Next, soak the boiled tapioca pearls in a bowl of cold water for 3 – 5 minutes to cool.
