Pork brain 400 gr (2 sets) Black pepper 5 seeds Cooking oil 500 ml Eggs 2 pieces Cilantro 1 sprig All-purpose flour 150 gr (Type 11 flour) Crispy batter mix 150 gr Ginger 1 piece Garlic 1 piece Bay leaves 3 leaves

How to choose fresh and delicious pork brain

  • Choose brains that still have a fresh membrane, pinkish in color, without cracks; they should feel elastic to the touch, not too hard or too soft.
  • There should be no unusual foul smell when smelling, as this may indicate that the seller has kept it for too long.
  • Avoid choosing brains that are not intact, leaking out, and do not have many red blood spots, bruises, or blemishes.

How to Prepare Crispy Pork Brain

  • Prepare the Ingredients

    Buy pork brain and use a knife or a scissors to make a light incision in the middle of the pork brain, gently use your hands to remove the membrane, then use a spoon to scoop the brain out.

    Next, prepare a bowl of diluted salt water, soak the pork brain in it, and start using a sharp object like a toothpick to remove all the blood vessels. After that, you just need to rinse it with clean water and let it drain.

    Wash the bay leaves, peeled garlic, and coriander that have been cut at the roots. Clean the ginger and slice it thinly.

    • Make sure to remove all the blood vessels; if they remain, the dish will be very fishy.
    • When rinsing with water, be gentle to avoid breaking the pork brain.

    Prepare a pot of water about 2 liters, add ingredients including peeled garlic, sliced ginger, bay leaves, cilantro, and prepared black pepper into the pot and boil for about 15 minutes.

    You put all-purpose flour, crispy frying flour, and 2 eggs on 3 plates respectively.

    You prepare a pot with 500ml of cooking oil, heat the oil for 10 – 12 minutes to reach a temperature of 150 degrees Celsius.

    Once the oil has reached the right temperature, gradually add each piece of pig brain that has been coated with layers of flour.

    Fry the pig brain for about 3 minutes, and when you see it turn golden brown and crispy, remove it to a plate lined with paper towels.
