Mix the flour
Put 100gr of glutinous rice flour, 50gr of rice flour, 5 tablespoons of sugar, and 1/4 teaspoon of salt into a bowl and mix well. Then, slowly pour in 120ml of hot water at about 70 – 80 degrees and continue to mix well.

Fry the cake
Pour into the pan an amount of cooking oil equal to 1/3 of the pan and heat until boiling. When the oil is hot, add the cake and fry until it is golden and crispy, then turn off the heat and take the cake out to drain the oil.
Tip: Fry on low heat until the cake is evenly golden and crispy, avoiding high heat as it will not cook through and will burn on the outside. Only increase the heat to high when the cake is nearly cooked to prevent it from absorbing too much oil. -
Coat with sugar
Place a pan on the stove, add 4 tablespoons of sugar and 20ml of water, then heat until the sugar melts.
When the sugar has completely melted and is bubbling, add the fritters and stir continuously until the sugar coats the fritters evenly. Finally, turn off the heat and let it cool.
