How to prepare Stir-fried Dried Bamboo Shoots with Mixed Vegetables

Preprocess the dried bamboo shoots
Soak the dried bamboo shoots in warm water for about 1 hour, then rinse them thoroughly and drain.
Place a pot on the stove, add enough water to cover half of the pot, and boil the bamboo shoots on low heat for about 15 minutes.
After soaking and boiling the dried bamboo shoots until soft, cut them into small strands suitable for eating.
How to properly preprocess dried bamboo shoots for quick softening
- Wash the bamboo shoots thoroughly and soak them in water overnight.
- The next morning, drain the soaking water, and rinse well. Do this for about 3 – 4 days for the bamboo shoots to soften.
- After soaking, place the dried bamboo shoots in a pot of boiling water, then boil on low heat for about 15 minutes. Drain the bamboo shoots into a colander, and then rinse them again with cold water.
- Repeat this process 3 – 4 times until the water is clear.

Prepare other ingredients
Shallots peeled, washed, and sliced thinly. Kohlrabi peeled, washed, and cut into long strips.
Carrots peeled, washed, and shredded. Dried mushrooms soaked for 10 minutes and then sliced.
Vietnamese pork sausage chopped finely. Glass noodles soaked in water for 15 minutes until soft, then drained and cut into long strips.
Green onions and coriander roots removed, washed, and chopped finely.

Stir-fry bamboo shoots with vegetables
Place a pan on the stove, add 1 tablespoon of cooking oil and then add shallots to sauté until fragrant.
Then, add the carrots, kohlrabi, glass noodles, and dried bamboo shoots in turn and stir well. Next, add the mushrooms and Vietnamese pork sausage to stir together.
Stir the ingredients evenly over medium heat for 5 minutes, then season with 1/2 tablespoon of soy sauce, 1 teaspoon of oyster sauce, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 teaspoon of pepper.
Finally, add the chopped coriander and green onions, adjust the seasoning to taste, stir well, and turn off the heat.
