  • Choose pieces of tofu that feel soft and smooth when held, have good elasticity, and feel light in hand.
  • Avoid pieces of tofu that are yellowing, have a smell similar to lime, and feel dry and crumbly when broken; these are tofu that has been stored for a long time or contains gypsum that is not good for health.

How to choose fresh bamboo shoots

  • When buying bamboo shoots, choose those that are rough in shape, with evenly spaced segments.
  • If the bamboo shoots have thin, crunchy skin and are juicy, you should choose to buy them.
  • Do not buy bamboo shoots that are overly white or brownish-yellow, that smell unpleasant, or are soft and mushy.

How to make Vegetarian Bamboo Shoot Salad

  • Prepare the ingredients

    Pick out old or wilted leaves from the mint leaves, wash them clean, and let them dry.

    Wash the fresh bamboo shoots 2 – 3 times, tear them into small bite-sized pieces, then blanch in boiling water for about 3 minutes, remove, let cool slightly, and squeeze out the excess water.

    Cut the tofu into thin slices about 1/3 of a finger thick. Heat the pan with oil until hot, then drop in the tofu slices to fry until golden and crispy, then cut the fried tofu into small strips.

    Peel the shallots, wash them clean, and slice them thinly. Place a pan on the stove, heat 1 tablespoon of cooking oil and add the sliced shallots to fry until golden and fragrant. Remove half of the fried shallots to a bowl, leaving the rest in the pan with the oil.

  • Mix the bamboo shoot salad

    Add to a bowl 1 tablespoon of sugar, 2 tablespoons of soy sauce, 1 tablespoon of lemon juice, 2 chopped chili peppers, stir until the ingredients dissolve and adjust the seasoning to your taste.

    Next, transfer the fresh bamboo shoots to a plate, drizzle the mixed dressing you just prepared and 1 tablespoon of fried onion (including the oil), mix well for about 3 minutes to let the bamboo shoots absorb the seasoning.

    When serving, take a sufficient amount of mixed bamboo shoots, sprinkle some roasted peanuts, some fried onions, shredded fried tofu, and mint leaves on top, mix well and enjoy.
