How to choose good white tofu
Choose tofu with a smooth surface. Good pieces of tofu made naturally have an ivory white or milky white color, without signs of discoloration to yellow like tofu mixed with gypsum.

How to make Vegetarian Spring Rolls in peacock shape

Prepare the ingredients
Cut the tofu into small strips.
Slice 100g of carrot thinly, and 100g into peacock shapes.
Wash and drain lettuce, cucumber, and cilantro. Cut cucumber into small pieces, about 3cm thick, and chop cilantro into small pieces.
Peeled garlic, chopped green onions, and chopped chili.

Stir-fry the filling
Place a pan on the stove, add 1 tablespoon of cooking oil, turn on medium heat, when the oil is hot, add a bit of chopped green onions to sauté until fragrant, then add the chopped tofu and sliced carrots to stir-fry.
Season with 1/2 teaspoon of vegetarian seasoning, 1/2 teaspoon of sugar, stir well for about 4 – 5 minutes, then turn off the heat.

Make the dipping sauce
Put the soybeans into a blender, along with chili, garlic, the remaining green onion, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and add a little water.
Blend the mixture until smooth.
Pour 1 teaspoon of cooking oil into a pan, heat the oil over medium heat, pour the blended mixture into the pan, bring it to a boil, then add chili sauce. Stir the sauce until it thickens, add about 1 tablespoon of toasted sesame seeds, mix well, and then turn off the heat.

Wrap the spring rolls
Cut the rice paper in half if it is round; if it is square, you do not need to cut it.
Moisten a bit of water on the rice paper, add lettuce, a little vermicelli, a bit of sautéed tofu, a small piece of cucumber, and a little cilantro. Then gently roll it up, near the end of the rice paper, add the carrot, and roll it up completely so that the filling does not fall out.
Tip
- Remember to leave some lettuce as shown in the picture for a more attractive spring roll!
- Do not soak too much water to avoid tearing the rice paper when rolling.

Decoration
The remaining carrot should be washed clean. Peel one end round as shown, then cut a thin slice, and carve into a crest, beak, and eyes.
Use a small toothpick to attach the crest, eyes, and beak to the peacock.
You can use a can of beer cut in half, then squeeze it and stab it into the carrot to create the peacock feathers (as shown).
Decorate the plate of salad with the carved peacock head, add some lettuce underneath and arrange the spring rolls around the edge as shown.
