How to make Fried Crab Stick Eggs

Prepare the ingredients
First, thaw the crab sticks and shred them into small pieces.

Make the sauce
Soak the shiitake mushrooms in water to rehydrate, wash them clean, and slice them thinly. Heat 1 tablespoon of sesame oil, sauté minced garlic until fragrant, then add 1 tablespoon of oyster sauce. When the mixture boils, pour in 100ml of water and bring it to a boil, then lower the heat.
Dissolve cornstarch in 20ml of filtered water, gradually pour the cornstarch water into the boiling mixture, stirring gently. Then add the shiitake mushrooms, wait for the mixture to boil evenly for a few minutes, then turn off the heat.
Tip for quickly softening dried shiitake mushrooms
- First, soak the shiitake mushrooms in hot water at 60 – 80 degrees Celsius for about 7 – 10 minutes until they expand.
- Then gently rub them by hand to remove all dirt and rinse with clean water before cooking.
