  • It is advisable to buy solid pieces of meat that are firm and elastic; when you press your finger into the meat, it should leave a dent but not leave a mark when you lift your finger, and the fibers of the meat should be even.
  • Meat that has been treated with chemicals will have an attractive color, but it will be dry, the fibers will be tough, it won’t stick to your hand when you touch it, but when cut, it will be mushy inside and have an odor. If pressing your finger into it leaves a dent with no elasticity, you should absolutely not buy it.

  • Avoid choosing bulbs that have sprouted, are bruised, have hard and soft spots, and uneven colors, with dried roots, as these onions are not fresh and may be bitter.

  • Prepare the ingredients

    Wash the pork belly with salted water to clean, scrape and remove any leftover coarse hairs on the pig’s skin, then rinse with cold water and let drain. Cut the meat into thin, bite-sized pieces.

    Cut the roots off the onions, garlic, and shallots, peel them, wash thoroughly, then mince the garlic and shallots, and cut the onion into wedges.

    Remove the wilted parts of the green onions and cilantro, wash thoroughly, shake off excess water, and then chop finely.

    Then add the onion and season with 2 teaspoons of sugar, stir-frying with the pork belly for another 2 minutes.

    After 2 minutes, when the onion is slightly soft, add 1 teaspoon of chili powder and stir-fry for another minute so that all ingredients absorb the seasoning.

    When the dish is evenly coated with the red-orange color of kimchi and chili powder, and all ingredients are cooked, taste and adjust the seasoning one last time, then add chopped cilantro and green onion, stirring for 30 seconds before turning off the heat.
