  • Oyster shell: Choose oysters with a tightly closed apex and shell. This ensures that the oyster has plenty of meat and retains the seawater inside.
  • Oyster meat: When opening the shell, if the oyster meat clings tightly and fills the shell, containing plenty of seawater, it is a good oyster.
  • Tap the oyster shell with your hand; if you don’t hear any sound, the oyster has died, it is no longer fresh.
  • Avoid buying oysters that you can easily detach the shell, as most of these are dead oysters. Do not choose oysters with roe as the meat will taste bitter and not delicious.

How to Make Taiwanese Oyster Omelette

  • Make the Sauce

    Prepare a hot pan, add 2 tablespoons of ketchup; rice vinegar, sugar, soy sauce, and vegetable butter, each 1 tablespoon.

    Next, add 1 tablespoon of cornstarch along with half a cup of water, stir well and pour into the hot pan.

    Crack 2 eggs into a bowl, beat the eggs with 1/4 teaspoon of salt and 1/2 teaspoon of ground pepper.

  • Fry oysters with potato flour and eggs

    Heat a pan over medium heat, add 2 tablespoons of cooking oil. Next, add the drained oysters and stir-fry for about 3 minutes until they firm up.

    After 3 minutes, spread the oysters evenly across the pan, gradually add the potato flour mixed with 1/4 cup of water and the egg mixture from step 3 into the pan.
