- Limit purchasing chicken that has become slimy or is large in size but weighs too light, as it may be chicken that has been water-injected.
How to choose fresh and delicious carrots
- Fresh and delicious carrots typically have a bright, deep orange color, with a smooth, shiny outer skin that is not rough or excessively scratched.
- Additionally, the greens should still be fresh and green, firmly attached to the body, without being broken or detached. Pressing gently should show that the carrots are not too soft.
- You should avoid purchasing carrots that are bruised, wilted, or slimy, as these are spoiled and not edible anymore.

Prepare the ingredients
First, take the chicken you bought and rub a bit of salt on the surface of the meat for 3 – 5 minutes, then rinse several times with water until clean, and let it drain.
For the carrot, peel the skin, wash it directly under running water until clean, let it drain, then use a knife to cut it into thin strips.
Peel the onion, cut it in half, then slice it thinly. At the same time, to reduce the pungent taste of the onion, soak the onion in a bowl of cold water for about 10 – 15 minutes, then take it out and let it drain.
Remove the seeds from the chili and slice it thinly. Peel the ginger, wash it clean, let it drain, and crush it.
Pick the young leaves of the Vietnamese coriander, then wash them along with the lime leaves until clean, and let them drain. Finally, crush 4 lime leaves, while the rest should be cut into fine strips, and the Vietnamese coriander should just be cut into sections.
