How to choose fresh chicken thighs
- Choose chicken thighs with light yellow skin, smooth texture, firm to the touch, and when pressed lightly on the meat, you can feel the elasticity.
- Choose chicken thigh meat that is pinkish-red, without any foul smell or sliminess.
- Avoid choosing thighs with loose skin and meat, dark color, bruises, or blood clots.
Garlic and shallots are peeled and then finely chopped.
Dried wood ear mushrooms are placed in a bowl and soaked in water for about 30 minutes until the mushrooms expand. After that, rinse them clean with water twice and let them drain. Next, cut off the mushroom stems and chop them finely.
Green onions should be trimmed by removing the wilted leaves, cutting off the dirty roots and the tops. Rinse them clean with water and then chop them finely.
Finally, add the chicken to a bowl along with 1/2 of the garlic, shallots, all the finely chopped wood ear mushrooms, 1 teaspoon of seasoning and 1 teaspoon of ground pepper, mix well and set aside to marinate for about 30 minutes to absorb the flavors.
Wrapping and boiling wontons
Place the chicken filling in one corner of the wonton wrapper, then roll it up from the front. Leave a small triangular corner at the front. Turn the dumpling upside down, use the two ends to pinch together. Continue wrapping the dumpling until all the filling is used up.
Prepare a pot of water, when the water boils, drop the wontons in. When the wontons start to float on the surface, continue to let them float for about 7 minutes to cook the filling inside. Then remove them and let them drain.
Make oyster sauce
Place a pan on the stove, turn on medium heat and add 1 tablespoon of cooking oil to the pan. When the oil is hot, add the remaining 1/2 onion and minced garlic to sauté until fragrant.
Add 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 teaspoon of seasoning powder, 1 tablespoon of chili powder, 1.5 tablespoons of chili sauce, 1/2 tablespoon of vinegar, and 1/4 cup of water, then stir well.
Let it cook on the stove for about 10 minutes on medium heat until the sauce thickens, then adjust the seasoning to your family’s taste, add the chopped green onions, stir well, and turn off the heat.
Finished Product
You place the drained wontons onto a plate. Drizzle some oyster sauce on top and start enjoying.
