Ingredients for Dried Shrimp Wonton Soup Serves 3

  • Good dried shrimp will have a natural reddish-pink color and will not show any tiny spots on the surface or change to any unusual color.
  • When touched, they should feel firm, and when smelled, there should be no fishy odor, as that could indicate the shrimp have been soaked in chemicals for longer shelf life.
  • Additionally, you should avoid choosing shrimp that are dark red, as those are dyed dried shrimp, which can affect health.

How to choose quality pork bones

  • Fresh pork bones will have a red color, not turning to any unusual colors, nor showing black bruises or tiny spots on the surface.
  • When pressing on the meat, it feels firm, has good elasticity, and is not slimy or too soft.
  • At the same time, to enhance the flavor of the dish, you should use fresh pork bones which are tastier than frozen ones.

How to choose fresh and delicious white radish

  • Sweet white radishes are mostly slender, while those with thick tails tend to be very bland.
  • In addition, fresh and delicious radishes will have a smooth, shiny skin, not scratched, and when pressed, feel solid, not dented or too soft and mushy.

    Take a bowl to break the dried wonton leaves into bite-sized pieces, and at the same time, soak them in 500ml of water for 30 minutes.

    First, rinse the pork bones with a little salt rubbed on the meat surface, then wash them with clean water 2 – 3 times and let them drain. For the duck blood, just wash it and cut it into pieces.

    • Method 1: Blanch the pork bones in boiling water for about 3 – 5 minutes, then wash them with clean water to eliminate the smell.
    • Method 2: Use a mixture of salt and white wine to rub on the meat for 5 minutes, then wash it clean 1 – 2 times for immediate results.
    • Method 3: Additionally, soaking the pork bones in rice water for 15 minutes is a very common method.

    Next, for the white radish, cut off the ends, peel it, wash it clean, and then cut it into bite-sized pieces. Next, wash the green onions and coriander after removing the roots, then chop them finely.

    Finally, place the dried shrimp in a bowl with 50ml of water and soak for 15 minutes.

    Tip: To prevent the green onions and coriander from wilting, make sure they are thoroughly dried before cutting.

  • Cook the broth

    Put a pot on the stove with 500g of chopped white radish, 500g of pork bones, 10g of dried shrimp, 3 liters of water, 1/2 tablespoon of salt, 1 tablespoon of fish sauce, and 2 tablespoons of sugar, and cook over medium heat for 15 – 20 minutes.

    When the water boils, reduce to low heat and cook for 45 – 60 minutes until the bones are tender, then add 300g of sliced duck blood, and finally season to taste.

    • Depending on your preference, you can use spare ribs or pork shank instead of pork bones.
    • To save time when simmering bones, you can use a lid.
    • To keep the broth clear, you should skim off any foam that forms during cooking.

    Next, using the same broth, add 5 dried dumpling wrappers and cook over medium heat for 5 – 7 minutes until the dumplings turn translucent yellow, indicating they are cooked, then turn off the heat.

    Tip: Since you have soaked the dumplings, they will cook very quickly, so there is no need to cook them for too long.
