Prepare Ingredients and Make Spring Roll Filling
Wash the pork and then finely chop it.
Next, wash the bean sprouts thoroughly and squeeze out the excess water.
After peeling and washing, julienne the carrots and onions. Chop the green onions finely.
Then, soak the wood ear mushrooms in warm water for 15 minutes until they soften, rinse, and chop them finely.
Quickly blanch the vermicelli in boiling water until soft, then cut into small pieces with scissors.
After preparing all the ingredients, put them into a large bowl, then add 2 egg yolks, 2 spoons of sugar, 1 teaspoon of seasoning powder, and 1 teaspoon of ground pepper, and mix well. You can adjust the seasoning to your taste. Marinate for 15 minutes to allow the filling to absorb the flavors.

Roll the spring rolls
You lay 1 rice paper sheet on the cutting board, then use a clean towel dipped in water to lightly wipe the surface of the rice paper to soften it for easier rolling. Next, you add another 1/2 rice paper sheet in the middle to prevent tearing when rolling.
You use a spoon to scoop an amount of filling about the size of 3 fingers and spread it at the top of the rice paper. Then roll tightly for 2 turns and stop to fold the two ends of the rice paper. After folding, continue rolling until the rice paper is finished.

Fry the spring rolls
You place the pan on the stove and turn on the high heat to heat the pan. After the pan is hot, you pour in enough oil to submerge the spring rolls.
Tip: You should use a deep frying pan to help save oil while ensuring that the spring rolls fry evenly and crispy.Wait until the oil is gently boiling, then drop each spring roll in and reduce the heat. After about 3 minutes of frying, turn the spring rolls over and continue frying for another 3 minutes.
