Salmon fillet 300 g Chopped green onion A little Minced garlic A little Minced shallot A little Dry batter for frying 4 tablespoons Flour 2 tablespoons Seasoning A little (Sugar – Fish sauce)

How to choose fresh and delicious salmon fillet

  • The fillet of salmon is a part located near the belly of the fish. It is very tender, the flesh is firm, deliciously fatty, and very rich in nutrients. The salmon fillet has a softer texture compared to the flesh of the fish’s body. If possible, you should buy freshly filleted salmon, at this time the fillet will have a slightly bright red color.
  • With fresh salmon fillet, the red color of the flesh will change to a slightly darker bright red due to exposure to the surrounding air. At this time, the flesh will be slightly flaky and may have a stronger fishy smell than when it was freshly filleted.
  • However, if you cannot find fresh salmon fillet, you can also look for frozen fillet available in supermarkets. This fillet, although not as fresh as newly filleted fish, still ensures the deliciousness and nutritional quality of the fish flesh.

  • Prepare the salmon

    First, rinse the salmon belly gently with diluted salt water, then soak the salmon belly in diluted lemon juice for about 2 – 3 minutes to remove the fishy smell. Next, let the fish drain, using paper towels to lightly absorb any excess water on the fish in preparation for the next step.

    In a bowl, mix 4 tablespoons of dry frying flour with 2 tablespoons of wheat flour, combining the flour mixture evenly. Then take the salmon belly and coat it thoroughly in the flour mixture before placing it on a plate.

  • Fry the salmon belly

    Place a pan on the stove, add oil to the pan so that it covers the surface of the salmon belly. Frying with this amount of oil ensures that the fish turns golden and crispy while saving your frying oil.

    After about 2 minutes, dip the end of a chopstick into the pan; if it bubbles, the oil is hot enough. At this time, gently add each piece of salmon belly to fry on medium-low heat. When the fish surface is slightly golden, use chopsticks to turn the fish to prevent it from burning.

    When the fish is golden on both sides, remove it and let it drain on a plate.

  • Coat with flour a second time and fry again

    To make the fish fillet crispier, after frying the fish the first time, you take the fish out and roll it in the flour mixture you used for frying. Then continue to put it back in the oil pan and fry over medium heat until the fish is golden and crispy on both sides. When the fish is evenly golden, take it out to prepare to sauce with fish sauce.

  • Make fish sauce

    Place a pan on the stove, add a little cooking oil to the pan. When the oil is hot, add chopped onion, garlic, and scallions. Stir well until the onion and garlic are golden and fragrant.

    Then add a small ladle of fish sauce (about 3 tablespoons of fish sauce) and a ladle of sugar and a ladle of water (in a ratio of 1:1:1) to the pan. Next, add 1 tablespoon of chili sauce. Use chopsticks to stir the mixture and cook it over medium heat until the mixture thickens.

    When the fish sauce mixture thickens, add the fried salmon fillet and stir well to coat the fish with the fish sauce. Turn off the heat and place the fried salmon fillet with fish sauce on a plate, sprinkle a little chopped green onion on top. That’s it, you’re done.
