- To prepare a delicious dish, you should choose chicken breast pieces with white skin, as this indicates larger chickens with tastier and firmer meat; younger chickens tend to have softer meat.
- If you buy skinless chicken breast, observe the layer of fat on the chicken. Choose the fat that is white for better taste.

Fry the Chicken
Crack 2 eggs into a bowl and use chopsticks or a whisk to beat the eggs.
Add 1/2 teaspoon of salt and 3g of grated lemon zest to the breadcrumbs and mix the mixture well.
Roll the chicken in all-purpose flour, then dip it into the beaten eggs and roll it in the breadcrumbs.
Place a pan on the stove, pour in 30ml of cooking oil and heat it up. Once the oil is hot, carefully add the chicken that has been coated in the flour to fry until golden brown.
The frying time is about 7 – 8 minutes over medium heat, then remove the chicken and place it on paper towels to absorb the oil.
Tip:
- Make sure the oil covers 2/3 of the chicken to fry it evenly crispy on all sides. Too little oil will make the chicken not crispy and easily burnt; conversely, too much oil will make it greasy when eaten.
- When the oil is hot, carefully add the chicken to avoid splattering oil on your hands, which can be dangerous!

Make the Sauce
In a bowl, add 200g of breadcrumbs, 1 tablespoon of minced ginger, 4 minced garlic cloves, 2 minced chilies, 3 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of sesame oil, 1.5 tablespoons of Hoisin sauce, 1/2 tablespoon of cornstarch along with 200ml of water and mix well.
Place a pan on the stove, heat the pan and add the mixed sauce to cook for about 5 minutes on low heat until the sauce thickens.
Finally, add the battered chicken to the pan with the sauce, mix well for the chicken to absorb the sauce, cook for 2 minutes and turn off the heat.
Tip: You can adjust the seasoning to suit your taste.
