How to Cook Braised Spare Ribs with Pepper
-
Prepare the ribs and ingredients
- When buying ribs, soak them in salt water for 3-5 minutes, then rinse with clean water.
- Cut into bite-sized pieces, about 2 finger joints (if you are not processing them immediately, store them in the refrigerator for preservation).
- Wash the green onion and garlic thoroughly. Then smash and finely chop them.
How to prepare pork ribs without a bad smell:
- Besides soaking the pork ribs in salt, you can blanch the ribs for 1 minute to let them release impurities, then discard this water.
- Alternatively, you can put a few slices of ginger and a bit of white wine into a pot of water. Then bring to a boil and blanch the bones for 3-5 minutes, turn off the heat, and rinse the bones thoroughly.
-
Marinate the ribs
Marinate the ribs with garlic, chopped green onions, 1 teaspoon of seasoning, 1 teaspoon of salt, and a little ground pepper.
Mix well and use plastic wrap to cover, place the bowl of ribs in the refrigerator for about 1 hour.
Tip:
- Marinating the ribs with wine can eliminate the fishy smell and after cooking, the ribs will be softer and tastier.
- The ribs should be marinated for at least 1 hour for the spices to penetrate evenly, making the dish more flavorful.
-
Cooking braised ribs
Set the flame to medium. Add a little cooking oil and 1 tablespoon of sugar to the pot to caramelize, until the sugar melts and starts to turn syrupy, then lower the heat and stir quickly.
Once the sugar gradually turns yellow and begins to bubble, add the marinated ribs and adjust the heat to low.
Next, add 100ml of water to the pot, cover, and cook for another 20 minutes until the water is nearly evaporated, then season with a little monosodium glutamate. Cook for an additional 5 minutes and turn off the heat.
Tip:
You can buy caramel directly at supermarkets and reputable grocery stores, or online at bachhoaxanh.com. You can also make caramel at home following TasteVN’s recipe.
