How to choose fresh pork bones

  • Fresh pork bones must have a characteristic smell, with a moderately thick layer of meat surrounding them, containing both lean and fatty meat.
  • The meat on fresh bones will be firm, not slimy, or have a bad odor.
  • Choose bones of moderate size, with a light pink color.
  • Do not choose bones that are too small, as small bones may indicate that the pig is sick and needs to be slaughtered quickly.

How to choose fresh ground pork

  • Fresh pork is dry, light pink in color, and not slimy.
  • A fresh piece of meat when ground will have a firm texture and no strange smell.
  • It is better to choose fresh pieces of meat that are whole and then grind them, as ground meat makes it difficult to check quality.
  • Avoid buying ground meat that is too mushy or has too red a color, as it may be spoiled meat that has been treated with chemicals to mask the smell.

How to choose fresh noodles and good wonton wrappers

  • Good noodles are usually chewy and not dark in color.
  • Good wonton wrappers should be of moderate thinness and elasticity.
  • Avoid choosing wonton wrappers that are too dry and lack moisture, as they will break when shaped.

How to prepare Wonton Noodles

  • Prepare the ingredients

    Pork bones to remove the smell should be soaked in diluted salt water for about 5 minutes, then rinse thoroughly with several changes of water and let drain.

    Dry shrimp should be soaked in warm water for about 15 minutes until the shrimp expand and soften, then rinse thoroughly with 2-3 changes of water and let drain.

    Wash the shrimp, cut off the head and tail, boil until cooked, then peel off the shell. Quail eggs should be boiled until cooked and peeled.

    Peel the white radish and carrot, wash thoroughly, and cut into round pieces about the thickness of 2 fingers. For the carrot, use half of it and dice it.

    Wash the shallots, peel and slice thinly. Wash the cilantro and chop finely.

  • Marinate the pork

    Put the pork bones into a bowl and marinate with 1 tablespoon of minced shallots, 1 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1 teaspoon of salt, and 1 tablespoon of sugar, mix well and let marinate for about 20 minutes for the pork bones to absorb the flavors.

    Place the minced pork into a bowl, add the diced carrot along with 1 teaspoon of minced shallots, 1 tablespoon of seasoning powder, 1 teaspoon of salt, and 1 teaspoon of sugar, mix well and let marinate for about 15 minutes.

  • Stir-fried pork

    Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up, then add 1/2 of the marinated ground pork and stir-fry over medium heat for about 15 minutes until the meat is cooked.

    For the remaining ground pork, scoop about 1 teaspoon and place it in the center of the wonton wrapper, then wrap it up so that the meat filling does not leak out.

  • Cooking Wonton Noodles

    Place a pot on the stove and add 2 tablespoons of cooking oil, then add the shallots to fry until golden and remove them to a bowl.

    Next, add the pork bones and dried shrimp and sauté over medium heat for about 10 minutes. Then pour in 2 liters of water along with the chopped white radish and carrot, reduce the heat to low and simmer for about 30 minutes.

    After simmering the bones, add 2 tablespoons of fish sauce, 3.5 tablespoons of sugar, 1 teaspoon of monosodium glutamate, and 2 tablespoons of seasoning powder, stirring well to dissolve the seasonings and adjust to taste before turning off the heat.

    Scoop out a portion of the broth into a small pot and then add the wrapped wontons and fresh noodles to boil for about 10 – 15 minutes over medium heat.

    When serving, simply place the wontons and wonton noodles in a bowl, add fresh shrimp, quail eggs, sautéed pork bones, and ground pork. Ladle in the broth from the large pot, sprinkle with fried shallots, cilantro, and a bit of pepper to enjoy.

    Tip:

    • You can boil the wontons and noodles in the broth, but it will make the broth cloudy and less appetizing.
    • During the broth cooking process, remember to regularly skim off the foam to keep the broth clear and more appealing.
