How to choose fresh and quality duck

For live ducks

  • You should buy ducks from reputable places with clear origins.
  • Choose ducks that are large enough, not too old and also not too young, the meat should be firm and thick, but not skinny or overly fatty.
  • You should choose male ducks as they are tastier than female ducks because male ducks provide fragrant, firm, thick meat and cook faster.
  • Avoid choosing ducks that are too young as the meat will be mushy and difficult to process. Avoid buying old ducks as the meat is very tough and takes a long time to cook.

For processed ducks

  • You should choose ducks that have just been slaughtered, with meat still warm. The outer skin should be yellow, not too dark, and avoid those with bruises.
  • Good ducks will feel firm and elastic when you press on the meat. Do not choose ducks that deform and are soft when pressed as they may have been injected with water.
  • If buying pre-processed and packaged duck meat, you should check if the bag’s seal is intact and whether the product is still within its expiration date.

How to make Duck Salad with Onions

  • Prepare ingredients

    Wash the duck breast and duck intestines thoroughly and let them drain. When washing the intestines, you should rub them with salt to eliminate any unpleasant odor.
