How to choose fresh, high-quality beef tenderloin
- You should prioritize choosing pieces of beef that are bright red, with soft, small fibers that are not too smooth.
- If you press lightly on a piece of good beef with your hand, it will have good firmness and elasticity, not sticky and will not emit any unpleasant or abnormal odors.
- Do not buy pieces of beef that are pale green or dark red, with dark yellow fat, that have white spots on the fibers, and feel mushy or slimy when touched.

How to choose fresh onions
- You should choose round onions with long roots, as these are good onions.
- Good onions will have firm, smooth skins, a beautiful yellow color, no dark spots, and cling closely to the bulb.
- Do not choose those that are misshapen, or completely missing the root part, as they will not be tasty.

How to prepare Beef with Lime

Prepare and marinate the beef
Wash the beef with clean water, place the block of meat in the freezer for 1 – 2 hours to help the beef firm up and make it easier to slice, then take the beef out, slice it thinly, and put it in a bowl.
In the bowl containing the beef, add 1 tablespoon of seasoning, 1.5 teaspoons of sugar, and 1 tablespoon of cooking oil, then mix well and marinate for about 15 – 20 minutes for the beef to absorb the seasoning.
How to clean and remove the odor from beef: Use a clean cloth to dry the piece of meat and then take roasted ginger, pound it finely, and rub it evenly over the piece of meat, then rinse with clean water. This method will help the beef be clean, reduce odor, and retain nutrients.

Prepare other ingredients
Lemongrass cut off part of the root, wash clean and finely chop.
Chili remove the stem, wash clean and then finely chop. Garlic peel off, finely chop.
Vietnamese coriander and basil pick the leaves, wash clean, drain and then chop small.
Onion peel, wash clean, and drain. 1 bulb cut into 4 parts lengthwise, then arrange the divided parts back together, cut horizontally into small pieces to prepare for frying onions. 1 bulb cut horizontally into thin slices to prepare for mixing in the salad.
Prepare the soaking mixture consisting of 1 tablespoon of sugar, 2 tablespoons of vinegar, 125ml of cold water, then add the sliced onion to soak for about 15 – 20 minutes to help reduce the pungency and make the onion crisper and tastier.
Correct way to cut onions without causing tears:
Method 1: Soak the onion in cold water for about 5 – 10 minutes before cutting.
Method 2: Place the onion in the freezer refrigerator for 10 – 15 minutes before cutting.

Mix fish sauce for dressing and dipping sauce
Make the dressing fish sauce by: putting 4 tablespoons of sugar, 2 tablespoons of water, 4 tablespoons of fish sauce, juice of half a lime, 1 teaspoon of garlic, 1 teaspoon of chili into a bowl and stir well until dissolved.
Next, make the dipping sauce: in another bowl, add 4 tablespoons of cold water and half the amount of the dressing fish sauce just mixed, then stir well.
Tip: To prevent the beef from releasing water, you should make the dressing fish sauce thicker than the dipping sauce (similar to above). -
Fry the shrimp chips
Place a pan on the stove, add oil to about 1/3 of the pan and turn the heat to high. Once the oil is hot, reduce the heat to low, add the shrimp chips and fry, flipping both sides until the chips are cooked and puffed up, then remove and let them drain the oil before turning off the heat.
Tip:
- To keep the chips crispy when eating, and not greasy, you can use a plate lined with paper towels to place the shrimp chips on.

Stir-fried beef
Turn the stove back on, add chopped onions and fry until golden crispy, then remove and drain the oil.
Put 50ml of cooking oil back into the pan, add all the lemongrass and fry until fragrant. Continue to add garlic and fry together until the garlic is also golden, then turn off the heat and scoop the mixture into a bowl.
Add the beef to the pan where the ingredients were fried and turn the heat to high, stir evenly and quickly. Add 1 tablespoon of oil with the onions, stir-fry for about 1 minute until the beef is medium-rare and firm, then turn off the heat. Continue to stir the beef until the pan cools down.
Next, squeeze the juice from the remaining 1/2 lemon, drizzle it over the beef and mix well, then scoop the beef into a bowl.
Tip:
- To ensure the beef is just cooked, delicious, and not tough, you should stir-fry the beef quickly.
- To avoid the beef becoming bitter, let the beef cool down before adding the lemon juice; do not add it while the beef is hot.

Mixing the salad
Wait for the beef in the bowl to cool completely, then drizzle 2 tablespoons of salad dressing, fragrant fried lemongrass, and mix well to let the mixture absorb the seasoning.
Add sliced onions to the bowl, and pour the remaining salad dressing on top. Add 1/2 of the amount of basil, Vietnamese coriander, fried onions, along with 1/2 teaspoon of chili, and 1 tablespoon of peanuts, then mix well for the ingredients to blend together.
Finally, transfer the mixed salad to a plate, sprinkle the remaining fried onions, basil, and Vietnamese coriander on top, and enjoy it with your family right away.
