  • Making chocolate chips

    Melt dark chocolate, then put it into a piping bag.

    Next, squeeze small peaks equivalent to the size of chocolate chips onto parchment paper and let the chocolate harden.

    Tip: If you already have chocolate chips, you can skip this step.

  • Whipping butter

    Beat 113g of unsalted butter until soft, then add 70g of brown sugar and 15g of white sugar and mix well until the butter is fluffy and white.

    Next, add 1 egg, 1/2 teaspoon of vanilla extract, and continue to mix until the mixture is thick and creamy.

    Tip for combining brown sugar and white sugar for a delicious cookie texture:

    • Brown sugar will give the cookie sweetness, softness, and aroma. White sugar will help the cookie achieve a crispy and firm texture. Therefore, you should combine both types of sugar with the above proportions for a better cookie texture.
    • If you are missing one of the two types of sugar, you can substitute them with equivalent amounts. However, this will change the texture of the cookie.

  • Mix the cookie dough

    Add 160g of finely sifted flour, 1/4 teaspoon of salt, and 1/2 teaspoon of baking powder into a bowl and mix well.

    Then, add the dry flour mixture into the butter mixture and mix thoroughly until combined.

    Once the mixture is combined, add 15g of finely sifted cocoa powder and continue to mix well.

    Next, add 40g of chocolate chips, mix well one more time, and it’s done.

    Finally, cover tightly with plastic wrap, pressing it against the dough, and refrigerate for 30 minutes to 1 hour.

  • Making mochi filling

    Put 70g of glutinous rice flour, 20g of cornstarch, 15g of sugar, and 140ml of unsweetened fresh milk into a bowl, then mix well until the mixture is smooth.

    Cover the bowl tightly with plastic wrap, then microwave at 800W for 1 minute and 30 seconds.

    After 1 minute and 30 seconds, mix the dough well and continue to microwave for another 1 minute and 30 seconds until cooked.

    When the dough is cooked, add 20g of coconut oil and knead the dough with your hands until the coconut oil is incorporated.

    Tip: If you don’t have a microwave, you can steam the dough for 30 minutes over medium heat!

  • Shaping the cookies

    Divide the cookie dough into several portions, each weighing 20g, then roll them into balls.

    For the mochi portion, also divide it into several parts weighing 10g each and roll them into balls.

    Use your hands to flatten the cookie dough, then place the mochi filling in the center, gather the edges of the dough together and roll it into a ball, slightly flattening it.

    Next, use a few chocolate chips to attach on top of the cookies.

  • Bake the cookies

    Preheat the oven to 180 degrees Celsius.

    Place the cookies in the oven, bake at 180 degrees Celsius for the first 9 – 10 minutes in the middle rack.

    Then, reduce the oven temperature to 160 degrees Celsius and bake for another 3 – 4 minutes.
