How to make Chocolate Chip Mochi Cookies
-
Making chocolate chips
Melt dark chocolate, then put it into a piping bag.
Next, squeeze small peaks equivalent to the size of chocolate chips onto parchment paper and let the chocolate harden.
Tip: If you already have chocolate chips, you can skip this step. -
Whipping butter
Beat 113g of unsalted butter until soft, then add 70g of brown sugar and 15g of white sugar and mix well until the butter is fluffy and white.
Next, add 1 egg, 1/2 teaspoon of vanilla extract, and continue to mix until the mixture is thick and creamy.
Tip for combining brown sugar and white sugar for a delicious cookie texture:
- Brown sugar will give the cookie sweetness, softness, and aroma. White sugar will help the cookie achieve a crispy and firm texture. Therefore, you should combine both types of sugar with the above proportions for a better cookie texture.
- If you are missing one of the two types of sugar, you can substitute them with equivalent amounts. However, this will change the texture of the cookie.
-
Add 160g of finely sifted flour, 1/4 teaspoon of salt, and 1/2 teaspoon of baking powder into a bowl and mix well.
Then, add the dry flour mixture into the butter mixture and mix thoroughly until combined.
Once the mixture is combined, add 15g of finely sifted cocoa powder and continue to mix well.
Next, add 40g of chocolate chips, mix well one more time, and it’s done.
Finally, cover tightly with plastic wrap, pressing it against the dough, and refrigerate for 30 minutes to 1 hour.
-
Making mochi filling
Put 70g of glutinous rice flour, 20g of cornstarch, 15g of sugar, and 140ml of unsweetened fresh milk into a bowl, then mix well until the mixture is smooth.
Cover the bowl tightly with plastic wrap, then microwave at 800W for 1 minute and 30 seconds.
After 1 minute and 30 seconds, mix the dough well and continue to microwave for another 1 minute and 30 seconds until cooked.
When the dough is cooked, add 20g of coconut oil and knead the dough with your hands until the coconut oil is incorporated.
Tip: If you don’t have a microwave, you can steam the dough for 30 minutes over medium heat! -
Divide the cookie dough into several portions, each weighing 20g, then roll them into balls.
For the mochi portion, also divide it into several parts weighing 10g each and roll them into balls.
Use your hands to flatten the cookie dough, then place the mochi filling in the center, gather the edges of the dough together and roll it into a ball, slightly flattening it.
Next, use a few chocolate chips to attach on top of the cookies.
-
Preheat the oven to 180 degrees Celsius.
Place the cookies in the oven, bake at 180 degrees Celsius for the first 9 – 10 minutes in the middle rack.
Then, reduce the oven temperature to 160 degrees Celsius and bake for another 3 – 4 minutes.
-
Finished Product
The cookies once completed have a soft, fluffy crust, sweet and bitter chocolate flavor, and a rich buttery taste, with a chewy filling that is both unique and incredibly delicious.

Prepare a bowl, add 2 tablespoons of unsalted butter and 6 tablespoons of granulated sugar, then use a whisk to beat until the butter and sugar are well combined. Next, add 1 chicken egg, 1 teaspoon of baking soda, 2 tablespoons of cocoa powder, 6 – 8 drops of red food coloring, and 2 cups of all-purpose flour; you can also add chocolate chips if available.
Once all the ingredients are combined, use the whisk to mix the dough until it forms a cohesive mass. Then, divide it into small portions, and store them in the refrigerator while you prepare the filling.
-
Make the mochi filling
You prepare another bowl, adding the ingredients in order including 1 cup of glutinous rice flour, 2 tablespoons of all-purpose flour, 1 tablespoon of tapioca flour, 5 – 6 tablespoons of sugar, 1 cup of fresh milk, and 1 tablespoon of cooking oil. Then use a whisk to mix the flour until it is completely dissolved.
Next, cover the bowl with plastic wrap and steam it or place it in the microwave for about 3 minutes. Once the dough is cooked, take it out and add a little peanut butter, then mix well until the dough is no longer sticky and has a smooth and elastic texture. You should also divide the mochi filling into small pieces, making sure that the weight of the mochi is slightly smaller than the cookie dough for easier shaping.
-
You take the portion of cookie dough stored in the fridge and start shaping the cookies with the mochi filling. You flatten the cookie filling and then place the mochi filling inside, rolling it back into a ball so that the filling does not show, then you flatten the cookie down or can shape it into any desired forms; you can also decorate with some chocolate on top.
After that, you put it into the oven to bake; you can also use an air fryer to bake the cookies. The oven temperature is 170 degrees for 20 minutes, and the air fryer is 160 degrees for 15 minutes.
-
Finished product
The cookies after baking are very fragrant with butter, the outside is crispy, and the inside is soft and chewy with a light sweetness.
Let the cookies cool completely, place them in a box or a sealed bag, and store them in the refrigerator for 3 – 5 days. When eating, simply reheat them in the microwave for about 5 seconds.
