  • You should choose aromatic gourds that feel heavy in hand, have a dark green skin, and have a natural fragrant smell when sniffed.
  • Prioritize buying long, evenly sized gourds; choose small or medium-sized ones, as these younger gourds will taste better.
  • Avoid buying gourds that are too old, with many black spots and scratches, or that are rotten.

How to choose fresh and delicious beef

  • When buying, you should press the piece of beef with your hand; if it is good beef, it will have good firmness and elasticity, not sticky to the touch, and no unpleasant or unusual odor will appear.
  • You should choose small and tender pieces of meat, with fine fibers, and when pressed, they have good elasticity.
  • Avoid buying pieces of beef that are pale green or dark red, with dark yellow fat, white spots on the fibers, and a mushy and slimy feel when touched.

How to prepare Stir-fried gourd with beef

  • Prepare and marinate beef

    After buying, wash the beef with clean water. To eliminate the odor of the beef, take 1 piece of ginger, crush it, and rub it all over the piece of meat, leaving it for about 2 minutes.

    Then, wash the meat again with diluted saltwater and then rinse with clean water. Marinate the meat with 1/2 tablespoon of seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of pepper, minced garlic, and let it sit for about 30 minutes for the meat to absorb the spices.

    • Method 1: Roast 1 piece of ginger until cooked, scrape off the burnt outer layer, then crush the ginger and rub it on the beef, leaving it for about 3 minutes, then rinse with clean water.
    • Method 2: Alternatively, you can use vinegar or white wine to wash it briefly, which also helps clean and effectively eliminate the odor of the beef.

    Peel the gourd, wash it clean, and cut it into bite-sized pieces.

    Remove the wilted leaves from the chives, wash them clean, and cut them into sections.
